Hash Brown Casserole II

Excellent! I didn't have cornflakes, so I sprinkled panko bread crumbs on top and covered them with spray butter. Also added bacon! Yum!

Mom's Zucchini Bread

My husband tasted this bread...and promptly ate the rest of the loaf all by himself! It's wonderful as written. It's also great with half all-purpose flour/half whole wheat flour, and half brown sugar/half white. An excellent way to use up the garden bounty- it freezes well!

Burgundy Mushrooms

These were great! I used a pint of fresh sliced portabella mushrooms instead of the canned. Added a clove of minced garlic to the broth/onions while it was simmering. And added about 1 1/2 TBSP of soy sauce when I added the wine.

Fried Dill Pickles

These were good as written, but needed a little something. I added a few drops of tabasco sauce to the egg mixture, and some garlic & onion powder to the flour mixture. This was great for breading zucchini as well!

These are quick and yummy! I usually use 1/2 c. pecans and 1/2 c. of the Kraft caramel bits from the baking aisle with 1 c. choc. chips.

Janine's Best Banana Bread

This has become my go-to recipe for banana bread; it's wonderful! I do add a bit of vanilla when I am adding in the eggs. A couple of suggestions for those having problems- one issue might be with the bananas themselves. Like others have said, use larger bananas. For a nice rich flavor and moist bread, you'll want to make sure the bananas are ripened to the point where they are nice and brown, & kind of "gooey" when you peel them. Some people even use black bananas. Also, be sure that you're not over-mixing the dough after you add the flour. I've also noticed that I usually have to bake this for an additional 10 minutes, but that may just be me. Yummy with chocolate chips, walnuts, or pecans!
