Flourless Peanut Butter Cookies

These are great for my low carb diet. I used natural unsweetened peanut butter, stevia/sugar blend (only 1/4 cup since it's sweeter) , the egg as directed, ADDED 1/4 cup sugar free chocolate chips along with a tsp of vanilla extract and pinch of salt. DELICIOUS!!

No Bake Cookies IV

These are yummy. Used semisweet & white "striped" chocolate chips and everything else as states. Had everything on hand and figured I should use them up because they were on the way to stale or already staled. Could not tell the difference.

Ghirardelli® Triple Chocolate Truffle Cake

All I can say is WOW. Extremely decadent, rich, sinful cake. But not so much cake as it is fudgy consistency. Still delicious...but oh so bad for you! I added fresh raspberries! Definately a special occasion treat. I made this cake and brought it to work as I want to make it for Valentine's Day for my boyfriend. (see my heart shape pic) One lady had 3 pieces... another coworker said it was "better than s-x". I am wondering if anyone has tried to lighten this up a bit (heart attack dripping in chocolate)? Maybe half the amount of eggs and use 4 egg whites + 4 whole eggs... and instead of butter use a vegetable butter spread. Maybe next time, I will try.

For an even spicier festive flavor, try using the seasonal pumpkin spice pudding mix (and add a tsp of vanilla extract) instead of vanilla pudding flavor.

Peach Cheesecake

Well, this is funny because I have had this recipe card in my recipe box for 15 YEARS and it is tattered as well. Except mine is called "Peaches and Cream Cheesecake". Every time I make this, the recipe is requested over and over. Now I lost my recipe box and while I somewhat remembered the recipe, I set out to find it. This is exactly like mine, except mine called for flour and added leavening, not baking mix. You can also use pineapple as well. I leave off the cinn-sugar topping...and if fresh peaches are in season, use them! Thank you for posting so I didn't lose the trusted recipe!

Pumpkin Gingerbread

This was great. I used self rising flour instead of the baking soda/powder/salt. I also used 1 whole tablespoon of pumpkin pie spice, since it contains all the spices called for, and another tablespoon of the ginger. I also reduced the amount of sugar, just using 1 cup white sugar, and 1 cup brown sugar. Next time I may add a little molasses to make it more gingerbready, and increase the ginger. I baked it at 325 for an hour and 15 and it was moist and not dry at all. Overall great recipe!

Pepperoncini Beef

I added enough beef broth to cover the roast, there was not enough liquid in the jar to cover. Also added some onions. Put in on asiago focaccia rolls and broiled with provolone, with horseradish. My boyfriend went crazy over this... and brought it to work the next day, and the next!

Marzetti® Hawaiian Slaw

I used the tri color slaw bagged mix, macadamia nuts, and dry mango or papaya chopped into bits instead of the raisins. I used light Miracle Whip and a TB of cider vinegar with black pepper. Gobbled up fast at my friend's luau!!!

Fig and Goat Cheese Pizza

I love goat cheese stuffed figs so I love the idea of the pizza. Changes I made: fresh, sliced figs, 1 thinly sliced shallot, and a ready made Naan crust, topped with fresh parsley. I did not carmelize the shallot as the oven did the work. I brushed olive oil on the crust, then sprinkled it with coarse sea salt and fresh ground pepper before adding the toppings...10 minutes @ 400 and it was done. I added a photo. Delicious and easy for summer! Next time I will add proscuitto as well!

This is my new wing recipe for sure! They are fantastic!! Only change, I baked covered with foil at 400 for 1/2 hour, then uncovered at 325 for an hour and a half, turning ever so often.

Pumpkin Fluff Dip

My friend gave me the receipt but I tweaked it in the following way to give it some more substance/protein: 1 (8 oz) fat free whipped topping 2 (3.4 oz) pumpkin seasonal pudding mix 15 oz solid pk pumpkin pie spice but I also add 1 (8 oz) block of fat free cream cheese. It firms it up. I serve with gingersnaps, cinnamon graham crackers, and red & green apple slices. I make it for my son's class room and every party the kids and teacher request it from me!
