Roasted Potatoes with Tomatoes, Basil, and Garlic

This is a great recipe - I make it often as a side dish to chicken or pork. I always par-boil my potatoes, then toss with veggies and spices and bake for about 20min to bring everything together and crisp them up. I usually add in a sliced up large red onion, and sometimes I omit the tomatoes since my boyfriend doesn't care for them. It's delicious either way, and it always looks nice!

Gnocchi with Sage-Butter Sauce

Loved it! The boyfriend and I both love gnocchi - this will likely become a popular side dish in our house. The sauce is simple and delicious. I want to try it with sweet potato gnocchi next time!

Meat Filled Manicotti

Yummy! I used ricotta instead of cottage cheese. For the filling, I used the egg whites and cheeses with ground beef, mushrooms, red onions, and spinach. I also added minced garlic, onion powder, black pepper, chili powder, oregano and basil. I mixed my leftover "stuffing" with the remainder of the spaghetti sauce and poured it over the manicotti, baked for 40 min, then added shredded mozzarella and shredded parmesan in the final 8-10 min. It was beautiful and delicious! Will make again, probably for company.

Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

This was DELICIOUS!! I used 8oz fat free cream cheese and added about 1c water to thin out the sauce. Doubled the garlic (we love garlic!), and used 1lb shrimp and 1lb fresh mushrooms. It was very good - will definitely make again.

Carrot Cake III

I made this recipe for my boyfriend's birthday, and it was AWESOME! I thought the amount of oil was a lot, so I only used 3/4c. I didn't change anything else besides leaving out the pecans. The recipe made 48 cupcakes and the amount of frosting was perfect. Thanks so much - I will definitely make this again!!

Peanut Butter and Banana Dog Biscuits

Super easy, and my dogs love them! I used oatmeal in place of the wheat germ, and chose to just roll pieces of dough into little balls instead of rolling and cutting. The recipe made about 200 tiny treats, and they are great for training! Refrigeration (1hr) really helped with dough handling.
