Muffaletta Pizza

Reviewed: May 24, 2015
i'm not sure if everyone else who liked this used thick crust dough but to me it was very salty.. i tend to like dishes that are well seasoned so idk what my issue was.. bf said it's salty bc of all the meats (pls note that i halved the amount of the meats) and that i shouldn't think of this as a pizza but more like a crustini or a flatbread.. maybe if i had this as a dip for crackers i'd like it more

Peaches and Tequila Sunrise Sauce

Reviewed: May 19, 2015
i used this on drumsticks and it tasted like a very mellow teriyaki chicken.. it almost feels like it needs some brown sugar.. i subbed marmalade for the peach preserves.. and added about a tsp of kosher salt but i felt like it could have used more.. it was okay but i see myself dipping this into some store bought teriyaki sauce

Multi Grain Pilaf

Reviewed: May 18, 2015
i chose this recipe bc i had some leftover white wine that i wanted to use up.. i cut this in half and used all white rice (1 cup).. i subbed chopped onion for the mushrooms.. used 1.5 cups water and the half cup of wine.. i was worried about it lacking salt/flavor as some commented and added 2 tsp chicken bouillon instead of 1.5 tsp.. next time i would reduce it a bit as it was a little on the salty side.. it makes me think of rice my mom or gram would make.. thank you for keeping me from throwing out that last bit of wine and making good use of it!

Turkey Picadillo II

Reviewed: May 17, 2015
this was pretty good but missing something.. i think i was expecting the olives and capers to be more pronounced.. i subbed dried cherries for the raisins and probably should have doubled them as i doubled the beans.. i reduced the cayenne to 1/4 tsp and could have gone up to 1/2 tsp.. 2 would have been way too much.. i should have seasoned the turkey as it was cooking b/c it was lacking something in the final product.. i salted to taste and added some onion powder at the end.. condiments will be added

Achiote Paste

Reviewed: May 16, 2015
this definitely isn't a paste.. instead i cut the recipe in half and used it as a marinade for 10 large drumsticks.. i was expecting more and am not sure what i did wrong.. i did sub kosher salt for the regular table salt.. i also only used 1 lime instead of the 2.5 lemons it called for as other people were saying they reduced theirs with positive results.. maybe it's b/c i only marinated this for 3.5 hours.. i don't know :( should i have saved the marinade, boiled it, and used it to baste as we grilled the drumsticks? i hate to second guess myself so much but i really wanted to love this.. it's always fun to try something new but i don't know if i want to give this another try.. it was okay.. i just wanted more

Braseltouille - Meatatarian Ratatouille

Reviewed: May 16, 2015
this was pretty good for being so simple.. i was expecting a bit more and found myself seasoning this to taste with garlic salt, seasoning salt, and onion powder.. i subbed parm for the cheddar b/c it felt like it would go with the meal better

Spiedies

Reviewed: May 15, 2015
this was really good.. i reduce the oil a bunch but stuck to the recipe pretty much with the exception of using fresh mint (3x the amount listed).. this marinated for 4 days in the fridge.. i ended up pan frying this b/c it was raining outside.. ty for the recipe

Lemon Basil Grilled Chicken

Reviewed: May 13, 2015
i don't know if it's b/c i used dried basil for the fresh or if i marinated for too long.. but this made me think of something i'd use for fish.. i used lime peel and bottled lemon juice.. this was okay but i was hoping for something more

North Carolina-Style Pulled Pork

Reviewed: May 12, 2015
worried about the negative reviews, i decided to cut this recipe down to 2 servings (my math) and just make the sauce.. i'm not a huge fan of sweet and i'm beyond in love with vinegar so i figured i'd like the sauce.. boy was i wrong.. even after adding more brown sugar it still wasn't anything good.. i ended up adding bottled bbq sauce, some worcestershire, and mustard to bring it back to something that resembles bbq sauce

Quick and Easy Chicken Noodle Soup

Reviewed: May 12, 2015
this was so tasty.. i used almost all of Brown Sugar Girl's suggestions except for the noodles.. i left them out and subbed potato instead.. i used bouillon for the broth's.. no additional salt was needed.. this soup is great as is or with a bit of lemon.. ty for the recipe!

Copycat Chipotle® Cilantro-Lime Brown Rice

Reviewed: May 11, 2015
this was a really good starting point.. i cut this in half which was perfect bc i had the boil in a bag brown rice that is 2 one cup servings.. i used 3 T bottled lemon juice for the lime (but i'm sure the lime would have been best) and instead of using minced garlic and sea salt i used a little less than 1 tsp of garlic salt.. left the olive oil and cilantro amounts the same.. ty for a good simple recipe

Cinnamon Bread Delight

Reviewed: May 11, 2015
this was pretty tasty.. i cut the recipe in half and it made 12 decent sized muffins.. i didn't do the cinnamon sugar thing on the bottom but maybe i should have.. i took another reviewer's suggestion of putting it as a topping but that didn't really work.. it still tastes good though! i added another 1/4 tsp of cinnamon and did the half white half brown sugar.. used almond milk for regular milk.. i resisted the urge to use pumpkin pie spice but now wish i would have.. i had about 3 T of chocolate chips left in my pantry and threw them in there.. hardly noticable but i wanted to use them up.. this was better than okay hence the 4 star rating.. ty for the recipe

Middle Eastern Tomato Salad

Reviewed: May 11, 2015
based on the reviews i thought i would have really enjoyed this.. it just tasted way too herbal for me.. i did sub cilantro for parsley and green onion for sweet onion and i cut the olive oil in half and nearly tripled the amount of lemon juice.. i also added one crushed garlic.. still unhappy with the dish at this point, i added some salad mix (iceberg lettuce, shredded carrot, and purple cabbage) and a good amount of salt.. if the title said this was some kind of topping and not "salad" i would have understood.. this was clearly meant to be added to something, not eaten as a snack or a "salad".. it made me think of tabbouleh without the bulgur/couscous

Cumin-Coriander Pork Rub

Reviewed: May 10, 2015
this was a five star recipe with some minor modifications.. i cut this down to 4 servings as we were going to grill three 8 oz boneless pork chops.. i had about 2 tsp to 1 tablespoon leftover which was accurate for the yield.. i was worried that the cumin was going to overpower everything else so i cut it down to 2 tsp.. and cut the chili powder (i used new mexico chili powder) to 1.5 tsp.. i then added 1/8 tsp of cayenne for a bit of heat as i didn't think my chili powder to be very hot.. i followed all the other amounts for the rest of the ingredients.. serving this up with grilled white corn on the cob and brown rice.. ty for the recipe

Heavenly Potatoes and Ham

Reviewed: May 10, 2015
this came out surprisingly well.. i was worried it was going to be bland but it wasn't.. i cut this recipe in half and doubled the chicken (that i used in place of ham) and the green onion.. i decided to precook the potatoes (russets) as stated in the directions, but only for 5 min's.. i used two cans of condensed cream of mushroom soup, half the cheddar and left out the sour cream and butter.. i added in about 3.5 cups of cubed mexican squash since i wanted to use them up.. also figured it would be good to add a veggie/some nutrition to this rich dish.. i didn't have parm bread crumbs so i used 3 T of a three blend parm, 2 T of sun dried tomato flavored parm, 1/2 t oregano and garlic powder, 1/4 t marjoram, and 1/3 cup plain bread crumbs.. i'm glad i read Laura's review about mixing it all in a large bowl first b/c this would be really hard to mix in the pyrex as it makes a lot.. ty for the recipe

Grilled Spicy Lamb Burgers

Reviewed: May 7, 2015
this was very tasty.. i used ground turkey (1.25 lbs) instead of the lamb.. and left out the oregano b/c i was worried it would be overpowering.. i also left out the molasses and sherry as i don't carry either usually.. and used 1.5 tsp of kosher salt for the regular.. i had mine straight up and bf had his in tortillas (we're socal).. ty for the recipe

Ray's Chicken

Reviewed: May 6, 2015
this came out pretty good.. i cut this in half and used it on 1 lb of chicken breast that i cubed up to make kabobs.. the chicken sat in the marinade for almost 2 days (change of dinner plans) and it was obviously very flavorful.. i added a lot less oil and maybe 1/2 tsp of fresh lime juice and a couple of tablespoons of bottled lemon juice to make up for it.. i subbed marsala cooking wine for the sherry.. left out the honey, brown sugar, and salt.. i felt like the oregano overpowered this a bit.. but otherwise i liked the end result.. we cooked it on the george foreman outside on a yoshi mat.. ty for the recipe

Reviewed: May 4, 2015
this was really good.. i made it for bf's lunch and he really enjoyed it.. i used all blue cheese dressing and frank's for the wing sauce.. only had red bell pepper but i'm sure the combo would have been nice.. i subbed sauteed chicken breast with S&P for the frozen breast strips.. ty for the recipe

Seasoned Swai Fish Fillet

Reviewed: May 4, 2015
i wanted to pan sear this instead of bake so i used the ingredients as more of a marinade.. this had way too much pepper.... i can't fault it though b/c it was meant to be cooked in the oven.. i subbed beer for the wine, lime for the lemon, and kosher salt for table salt.. i made this as part of lunch for me but i think i'll let bf have the rest that i didn't eat
