1-Pot, 3-Bean Chicken Stew

I did not care for this recipe. For 8 servings there sure is more than enough beans and tomatoes, but no real flavor. I won't make again.

Deep Fried Black Eyed Peas

I was not impressed. What an oily mess and a terrible jolt to ones system (meaning your body). And one does what, with these fried things? Yes I fried them as the recipe called for and it looked just like the picture, but please...popcorn would have been better.

Quick and Easy Alfredo Sauce

Made this for Olive Garden's Chicken Alfredo Pizza (found in an old Woman's Day magazine) and I had no alfredo sauce. Very good! I have leftover sauce to make a pasta dish tomorrow! Thanks for a "keeper" of a recipe!

Grandma's Corn Chowder

Good quick recipe. I changed the servings to 2, didn't have bacon, but had two slices of prosciutto whick I chopped and fried as bacon. Didn't have creamed corn, but frozen corn worked well. Used half & half and about 1 TBLS butter and mashed the potatoes a little to thicken slightly. Also added some nutmeg (fresh grated) at the end-just a touch. Very good despite not having the exact ingredients. This was a really quick homemade chowder and I will make again!

Chinese Chicken Fried Rice II

Great recipe! I added 1/2 c. peas, 1/3 c. chopped carrot, 1/2 c. bean sprouts and 3/4 c. chicken. Also I bumped the butter up to 2 TBLS adding one into pan with oil when sauteing the onions and carrots. I probably had about 3 cups of rice from 3 days ago so my rice was a little bit more, but that was ok since I had all the other veggies. Turned out really good. Thanks for sharing your recipe!

Caramelized Spicy Pumpkin Seeds

I made this three times this fall!! First I think my pumpkin seeds actually measured 2 1/2 cups, and I soaked them in heavy salt water 24 hours. Make sure you allow the seeds to DRY! I did change the baking time to about an hour as I like mine really toasted! Two of the times I changed the sugar to dark brown sugar (just the sugar you caramelize) Plus adding 2 tbls olive oil and 1 tbls butter to the pan. You have to stir this constantly and just when everything is coated get it into the other sugar. When I made this per directions it was just as good! I did what others said with the cayenne by making it a 1/4 tsp. I'm told to keep making it this way!! Thanks for the recipe!!

Cheesy Chicken Meatballs

This was a good way to use ground chicken but mine turned out more like a stuffing drop biscuits, probably because following the directions left it extremely runny so I ended up adding about 1 cup fresh bread crumbs to get something to work with. Forget about trying to make a regular meatball with your hands, use two spoons and do the drop biscuit way. Make sure you spray your foil very well. I had to make a chicken cream soup sauce (1 can cream of chicken + 1/3 c liquid) to dip them in. I took others advice and only added 1 tsp garlic powder which to me, still seemed like too much. I like spicy food but 1 tsp red pepper flakes is too much. Next time I will cut that back to 1/2 tsp. I actually think they would be great in a chicken soup as dumplings! Fast Rice Pudding

This was very good and easy! I did not use a TBLS of cinnamon only 1 tsp and I did add 1 tsp vanilla at the end. No problems with the time as every stove is different, after it was boiling it was reduced to low and covered, about 5-9 minutes, stirring every couple of minutes. I used long grain rice which was a few days old in the refrigerator and it made 5 little dessert cups. This was a great way to make use of leftovers with very few ingredients. I am keeping this one! Thanks for the recipe!

Butternut Squash Soup

I have made butternut squash soup before and wanted to try another recipe. The amount of cream cheese seemed like too much so I only put in about 6 oz of cream cheese. I have to agree with other reviews that the cream cheese ruins this. It adds a tang that butternut squash can't compete with. Might have been better with just a splash of cream or half and half. It was also too thick. Cannot recommend this.

Quick and Easy Black Bean Soup

Made this today using my pre-made and frozen black beans I cooked from scratch. This was delish! I live alone so I liked this recipe because it was easy to halve. I was using up some chicken stock so I only needed about 2 TBLS of the water and I did not have a fresh lime so I substituted 1-1/2 T of lime juice concentrate, and I did not have green onions so I eliminated them from the garnish. This is a keeper since most ingredients are on hand in my home!
