My Country Style Steak

This was really great on a cold winter night. I had all of the ingredients on hand. I served over baked baby potatoes and used only 2 cube steaks totaling .75 lbs. It was just enough for my family of 4 (6 and 8 year old kids and parents). What a great way to stretch a small amount of meat. Came out very tender and flavorful.

Golden Sweet Cornbread

Finally!!! I've found the perfect cornbread recipe after searching for quite a while. Last night served this to 4 adults and 6 kids (ages 6-12) and everyone loved it. Some people added a bit of butter or creamed honey, but it was perfect just as is. A bit, but not too crumbly.

Baked Pineapple Casserole

I doubled the recipe and used one whole long loaf of french bread from my grocery store's bakery. It turned out really well. I served 16 and still had about a half a pan left. Ate it for breakfast cold and it was still really good. I would up the spices next time. I also think adding raisins would be a nice touch. It's really a bread pudding.

Rosy Rhubarb Salad

Took this to a BBQ and it was a hit! I didn't make it in the shape of a mold because I didn't have one. I also accidentally added the strawberries a little late (about 2 hours after putting it in the fridge), but it still tasted great!

Midwest Loose Meats

The flavor was sensational. Very savory and a bit salty. Exactly the kind of food I craved when I was pregnant! The only downside to this recipe is that it's a bit messy for kids 6 years old and younger. They'll love the flavor, but you'll have lots of little pieces of meat to wipe up at the end of the meal.

Chicken Chimi in the Oven

This is an awesome recipe to use up leftover chicken. I used a fresh salsa which I think made a big difference. I also saved a little time by throwing the cooked chicken in with the salsa mix when chopping it in the food processor. It really shredded the chicken in a jiffy.

Sweet Potato Pie I

Absolutely sensational. I'm on a non-dairy diet and made this with vegan "butter" sticks and vanilla almond milk. No one could tell anything was different. Pair this with "Ruth's Grandma's Pie Crust" for pie perfection!!

Rhubarb Cherry Pie

The perfect blend of sweet and tart. I used frozen rhubarb from our garden and a "lite" cherry pie filling. Pair this with "Ruth's Grandma's Pie Crust" recipe on AR for a truely outstanding pie.

Spinach Brownies

The recipe is ridiculously versatile. The first time I made it for a family dinner people thought of a million ways to serve it (at a brunch in muffin tins, on top of crackers as an appetizer, etc). I also sauteed the spinach in a little bacon grease instead of boiling and it was truely heavenly!

Alyson's Broccoli Salad

This recipe is excellent. Personally, my head of broccoli must have been a little small because there was too much dressing. However, the dressing was wonderful and I'm sure adding extra broccoli would fix this right up!

Annie's Fruit Salsa and Cinnamon Chips

This was really good. The cinnamon chips alone are a treat. I doubled the recipe and had a bunch of leftovers and stuck them in a blender. It was delicious and tasted a little bit like flavored applesauce. Added some yogurt, and it became a breakfast smoothie.
