Stuffed Shells III

Reviewed: Jan. 4, 2011
Good recipe. Extremely cheesy. I will add a little more sauce next time because the leftovers were really dry the next day.

Very good, solid recipe, but didn't blow me away.

Pepperoncini Beef

This recipe is insanely good for how simple it is. My 5 and 8 year olds loved it as well as the adults.

Coffee Bonbons

Reviewed: Dec. 16, 2010
I really enjoy these, but they can be really potent depending on which instant coffee brand you use. My kids didn't like them much, but the grownups sure did!

Cherry Snowballs

I make this recipe every year at Christmas. It is wonderfully festive and flavorful. I only dip the tops in order to simplify and it works beautifully.

Peanut Butter Kiss Cookies

Reviewed: Dec. 16, 2010
These cookies are so wonderful! They freeze well, they ship well, and they only have a few ingredients. Small children can help add the kisses to the tops.

Spinach Chicken Parmesan

Reviewed: Nov. 27, 2010
Good, solid recipe, but not special enough to warrant a 5 rating. I'm pregnant and trying to get greens in my diet anywhere I can. 1 of my 2 kids happily ate it. Not sure if I will make again or not.

Double Layer Pumpkin Pie

Reviewed: Nov. 27, 2010
Made this recipe for Thanksgiving. It was really, really sweet. I expected it to taste more like a traditional pumpkin pie, but it was more like a very sweet pumpkin and whipped cream pudding. I did refridgerate the bottom layer before adding the top layer and the layers stayed perfectly separated.

Baked Kale Chips

Reviewed: Nov. 3, 2010
These were (surprisingly) delicious! 10 minutes was enough in my oven. Kids liked them. I used regular salt instead of seasoned salt. There was no bitterness at all. I'm pregnant, so this was a great way to get in a serving or two of dark leafy greens!

Peanut Butter Chews

Reviewed: Oct. 24, 2010
I made these for a church event. The taste is best described as just sweet. Not as "peanutty" as I expected. Also, they were ugly. Not appetizing to look at. Fine to make with your kids if you are looking for something quick and easy, but definitely not for entertaining. And not a good choice if you have braces or dentures, as they were extremely chewy.

Make-Ahead Mashed Potatoes

I make these every holiday. They are fantastic. Adding parsley or chives gives a beautiful presentation!

Rolled Flank Steak

Reviewed: Oct. 11, 2010
Crazy good! Precook the bacon, and try with roasted red peppers. I also just used standard white mushrooms instead of crimini. I used Lawry's seasoning salt because I wasn't exactly sure what "steak seasoning" was. The recipe was incredible and beautiful.

Libby's® Famous Pumpkin Pie

Reviewed: Oct. 11, 2010
The flavor was great. I used 2% evaporated milk and it worked just fine. My only complaint is that the crust was mushy. I wonder if precooking it a little would've helped.

Jalapeno Snacks

Reviewed: Oct. 11, 2010
I can't rave enough about these. While they aren't the healthiest, they taste fantastic! I cooked mine on the grill and they were awesome. My husband, daughter and I also ate them cold out of the fridge the next day, and they were still good! Next time I'm going to try lower fat versions of the original and still see if the flavor stays true. My toothpicks kept breaking as I tried to stick them through, so I just wrapped the bacon tightly and didn't even use the toothpicks. I also soaked the peppers in water to kill the heat a bit, but next time I'm going to leave them as is to give them a little more bite!

Zucchini Pie

Reviewed: Sep. 2, 2010
My whole family (5 and 7 year olds included) enjoyed this recipe! We used yellow crookneck squash instead of zucchini the last time we made this and you couldn't tell the difference. It's a great meal for breakfast, lunch or dinner.

Zesty Feta and Shrimp Summer Pasta Salad

Reviewed: Aug. 31, 2010
I made it exactly as listed and it just wasn't great. I like all of the ingredients, but the balsamic vinegar wasn't a great choice of "sauce". It made a really dry salad. Perhaps I should've tried the balsamic VINEGARETTE as others suggested.

World's Best Lasagna

Reviewed: Jul. 12, 2010
This IS the world's best. I always end up with too much sauce and can't fit 6 noodles in a single layer, so I suggest making 3 layers. Also, this sauce is fantastic all by itself! It's a permanent fixture in my recipe book.

I thought this recipe was sensational! My two cents is that it is a fantastic recipe for adults. The kids didn't like it until I added tomato sauce.
