Sweet Potato Pie I

Absolutely sensational. I'm on a non-dairy diet and made this with vegan "butter" sticks and vanilla almond milk. No one could tell anything was different. Pair this with "Ruth's Grandma's Pie Crust" for pie perfection!!

Chicken Chimi in the Oven

This is an awesome recipe to use up leftover chicken. I used a fresh salsa which I think made a big difference. I also saved a little time by throwing the cooked chicken in with the salsa mix when chopping it in the food processor. It really shredded the chicken in a jiffy.

Bacon-Roasted Chicken with Potatoes

Midwest Loose Meats

The flavor was sensational. Very savory and a bit salty. Exactly the kind of food I craved when I was pregnant! The only downside to this recipe is that it's a bit messy for kids 6 years old and younger. They'll love the flavor, but you'll have lots of little pieces of meat to wipe up at the end of the meal.

Rosy Rhubarb Salad

Took this to a BBQ and it was a hit! I didn't make it in the shape of a mold because I didn't have one. I also accidentally added the strawberries a little late (about 2 hours after putting it in the fridge), but it still tasted great!

Brunch Omelet Torte

This was great, even when I took out the dairy and used vegan cheese and earth balance sticks! I also added broccoli with the potato mixture and it was great (although I used less potatos than the recipe called for. I also cooked the potato mixture in a dutch oven on the stovetop because there was no way my skillet could handle the volume!

Baked Pineapple Casserole

I doubled the recipe and used one whole long loaf of french bread from my grocery store's bakery. It turned out really well. I served 16 and still had about a half a pan left. Ate it for breakfast cold and it was still really good. I would up the spices next time. I also think adding raisins would be a nice touch. It's really a bread pudding.

Serbian Ground Beef, Veggie, and Potato Bake

My family loved this. I thought the spice mix was definitely "unique", and I alone would've given it a 4 but my family protested my rating! One way to make this dish super simple to prepare was to bring out my food processor. I was able to chop, shred and slice all the veggies, which cut down significantly on the prep time. Next time I will add one additional layer of potatoes in the middle. The potatoes were my favorite part, and there just weren't enough of them. This recipe perfectly served two adults a 6 and an 8 year old. I don't think it would've made enough for 4 adult servings without signifcant additional side dishes.

Grilled Marinated Shrimp

Add this to your next picnic! I used dried parsley since I didn't have fresh on hand. Also, I broiled this in the oven instead of grilling. Despite the other reviewer who said you couldn't taste the red pepper sauce, I disagree. These shrimp have a little bit of bite to them, but the heat was happily tolerated by my 6 and 8 year olds. I served it with brown rice and corn.

Cod au Gratin

This is a solid everyday dinner for families with kids. I find it bland, but the kids and hubby love it. I often stir in a bag of frozen veggies (peas, corn, beans, etc) when poaching the fish and add it all to make a one dish dinner. Next time I will try a sharper cheddar or swiss and see if that helps perk it up a bit.

Fluffy Peanut Butter Frosting

This recipe requires about twice as much milk as is called for. However, if you add the extra milk, the topping is good when paired with chocolate cupcakes. I wouldn't say it is to die for, but it makes a decent dessert.

Homemade Banana Pudding Pie

This recipe was OUTSTANDING. Even just the pudding part could be eaten on its own as a perfectly acceptable dessert. I made two of them, one as directed, and one with graham cracker crumbs instead of vanilla wafers. Both were sensational.

Chicken Marsala

I would've given this a lower score, but since I omitted the butter by choice, I didn't feel it was fair to potentially penalize the recipe which may have been a little better had I added the additional butter. However, no one in the family enjoyed this one. I think it may have been the cooking sherry that killed it. It seemed very strong. It was all we could taste.

Golden Sweet Cornbread

Finally!!! I've found the perfect cornbread recipe after searching for quite a while. Last night served this to 4 adults and 6 kids (ages 6-12) and everyone loved it. Some people added a bit of butter or creamed honey, but it was perfect just as is. A bit, but not too crumbly.

Jerre's Black Bean and Pork Tenderloin Slow Cooker Chili

If you use mild salsa, this is a very mild chili, which makes it perfect for smaller kiddos. I served this last night to 4 adults and 6 kids (6-12 years old) and everyone loved it. Those who wanted it spicy added a few drops of hot pepper sauce. I didn't drain the beans. Served with shredded cheese and sour cream. Meant to put avocados on the table too--but forgot!

Peanut Butter Bars I

I really wanted to rate this a 5, but the chocolate top layer kept separating from the bottom layer which made cutting and serving this for a party a little tricky. I did use all natural pb. I wonder if that is the problem. I did step one in a food processer, which allowed me to freshly crumb the graham crackers first, and then add the remaining ingredients. The flavor was very good. Just the texture issue with the 2 layers separating.

Wheat Germ Whole-Wheat Buttermilk Pancakes

These are a good healthy alternative to buttermilk pancakes made with white flour. However, the batter seemed very thick so I added a little more milk. They are not a fluffy pancake, which is why I didn't give them 5 stars.

My Country Style Steak

This was really great on a cold winter night. I had all of the ingredients on hand. I served over baked baby potatoes and used only 2 cube steaks totaling .75 lbs. It was just enough for my family of 4 (6 and 8 year old kids and parents). What a great way to stretch a small amount of meat. Came out very tender and flavorful.

Absolutely outstanding. This is the best recipe I've found on allrecipes.com in quite awhile. 6 and 8 year olds loved it as well as the adults. I wouldn't change a thing. Even the leftovers were great!
