Zucchini Herb Casserole

Reviewed: Aug. 8, 2012
followed others advise, doubled (maybe tripled) spices. Kept cheese the same, only did about 3/4 cup of the chopped tomatoes, used regular onion cause thats what I had, little extra rice that I cooked in chicken boul., and I also added part of a red pepper when frying onion and zuc. This is YUMMY! I hope no one else wants any!! ;-)

Zucchini Ranch Meatloaf

Reviewed: Jul. 25, 2012
I made this for dinner last night for the family and it went over very well. I know that some people are very against ratings when you have changed it up but in my opinion we all find a base recipe and change it a little based on our personal tastes...It may give others an idea on what suits them.....that being said....I used all ground beef cause thats what I had on hand. I used all the ingredients called for with out subsitution...I just used more of them then called for...nothing major, just heavy handed. I also had a package of dry ranch that I had already used half of so I added that as well as what the recipe called for. I didnt have steak sauce for the top so I used BBQ that I jazzed up. The kids suprisingly did not like the glazed but really liked the meatloaf itself. I will gladly make again!!

Easy Tuna Casserole

Reviewed: Jul. 18, 2012
okay, I have no desire to get into this bit about doctering a recipe and then reviewing it.....I do feel many of us find the basic recipe and change it up somewhat to suit our own tastes....which is what I did with this one. I love tuna casserole (a good one) but I like it very creamy. I used 1 and 1/4 cups macaroni (uncooked) I did not measure after i cooked it to see what it equaled. I didnt have cream of chicken soup so I used cream of celery (1 and 1/2 cans) I sauted some diced onions and a little garlic and threwthat in the mix. 2 cans of tuna and someone mentions some mayo so I added a heavy tablespoon of that too!! A little extra cheese in the mix too (velveeta) and the cheddar on top! Very Very good!!! also I recommend using a round baking dish instead of rectangle (it keeps all casseroles more moist) Over all I was VERY impressed with the flavor being as easy as it was

Amish Macaroni Salad

Reviewed: Jul. 1, 2012
Different than the tuna mac I am used to making but very good. I have made it twice in 3 days and both times upped it to serve 9, first time I only had a few tablespoons left after all was said and done. The first time I used a cup of sugar (again this was for 9 not 6) it was toooo much, so i tried to counter with some heat and it worked out ok. Today I decreased to a scant 3/4 cup. I skipped the red bell pepper and used fire roasted red pepper from a jar instead. I threw in an extra tbps of relish and rubbed the celery seed between my fingers to help release the flavor. Some people mentioned adding some cheese so I threw in a heavy handful of shredded cheddar jack. I know people can get kranky about reviewing a recipe after making changes but I wanted to share anyway. Good Stuff....ooohhhh and I used helmans cause thats what I always have, not miracle whip.

Daisy Brand Chicken Nachos

Reviewed: Feb. 2, 2012
I made this tonight but subsituted the chicken for hamburg (may sound odd, I know but it was what I had thawed) I only added olives and peppers and beans to half the pan cause I have a 6 and a 8 year old who can be a bit picky. NO COMPLAINTS at all! the kids loved it and said they think they liked the hamburg better than they would chicken (i am not sure of this but who knows) recipe is gonna be made at the upcoming superbowl party!

Chicken Chimichangas with Sour Cream Sauce

Reviewed: Jan. 28, 2012
I was impressed when my 8 and 6 year olds enjoyed this so much they asked to have the left overs the next day. I cook a wide variety of things and they are very used to having to at least taste it...i assumed this would be a one bite wonder for them but NOPE! well done!

Vegetable Cheese Soup II

Reviewed: Jan. 28, 2012
made this today, its really good. I did use brocolli (personal taste) I dont think i would add any salt next time, the soup mix and cheese have more than enough. I felt the end result was a bit salty so I attempted to cut it down a little by adding some milk. I cooked in the crock pot on high for about 2 hours. Will make again for sure!

We made this kids first and husband tried one while waiting for the hot batch.......he was amazed at how good this was!! We were not getting more than one a piece cause the boys were not sharing any more than that! Give this bbq sauce a try! You wont be let down. 5 + stars!!!!!!!

Juicy Roasted Chicken

Reviewed: Dec. 6, 2011
I made this to night with the addition of garlic powder, I also used butter instead of marg. It was very tender and had a good flavor. I may have added to much kosher salt to the chicken cause the gravy that I made from the pan drippings was a little to salty for my and my family taste (still good just a smidge to salty) which is entirely my fault for being to handed with it. Will deff. make again

Chicken and Gnocchi Soup

Reviewed: Oct. 16, 2011
Yumm... went to Olive Garden the other day for soup, salad, and bread sticks, this was the soup (or very similar) to the one I had! As soon as I got home I began searching the web to find a version of it. I found several but this is the one that sounded the most like it. I made it today for a get together and it got two thumbs up all around....even by the 1 - 10 year old boys that were here (6 of them). I WILL BE MAKING AGAIN AND AGAIN!

Baked Ziti I

Reviewed: Oct. 5, 2011
My husband told me at least 4 times that this was excellent. My kids ate at the neighbors tonight so they didnt get to try it but they will have the left overs tomorrow. I layered like others suggested instead of the following the directions. I liked it a lot but I think that next time I will add extra sauce (personal taste) ohh....I also covered with foil while baking. Give it a try, you wont be disappointed! Just be prepared.....it makes a ton!!
