Mandarin Orange Cake III

This is a nice easy and quick recipe. At first I couldn't believe there was no butter in the batter. But then I realized the more I mix it, the more liquid it becomes because the mandarin oranges becomes flakes. You don't taste the orange, but it is a light and refreshing cake. If you are looing for something not overly sweet and can stand alone without a glob of icing on top, this is a good recipe

Hong Kong Style Egg Tarts

This recipe was perfect for me. I substituted shortening for butter and used aluminum papered muffin cups. There was a lot of dough, but I used it all any way. The result is that at 450, it browns perfectly after 20 min. for a flaky crust. If you use less dough or make the shell thinner, I suspect the crust will be too brown. There is also too much filling. I only needed a little more than half of what the recipe calls for.

Molten Chocolate Cakes With Sugar-Coated Raspberries

This recipe was easy to make and ideal for entertaining when you have several complicated dishes to make. I made it the night before and popped it in the oven at the end of our anniversary dinner. For plating I served it upside down with a little powdered sugar and drizzled a pattern of batter on the plate around the cake. My husband thought it looked like a simple and classic that way.

Authentic French Meringues

I don't have an extremely sweet tooth, and thought this original recipe is way too sweet. So I cut the sugar to half and then I added 1/2 tsp of cream of tartar to compensate. My husband's grandmother use to make meringues for him, and he said it is exactly like he remembered it. So obviously the lack of sugar did not affect the sweetness so much as the rigidity of the meringues. But the technique of this recipe is perfect!
