Russian Salmon and Potato Salad

This was really good, and popular with guests. I will make it again. One problem was the quality of the canned salmon. I didn't expect to have to pick out bones. (Bumblebee pink salmon). I will try to find a higher quality product to use in the future, because I was worried that bones would slip by me and cause problems for my guests.

Russian Carrot Salad

Made this as part of a Russian themed dinner party. This was by far the favorite salad of guests. Based on another recipe I found, I did add 1/2 cup of diced prunes. I know it sounds odd, but it was really wonderful.

Roasted New Potato Salad With Olives

It was a good change from traditional potato salad, and I like the idea of roasting the potatos. However, the kalamata olives were too strong in proportion to the dish, and so it wasn't a knock your socks off experience for my guests. I would probably make again, but reduce kalamata olives and include some other ingredients like chopped celery.

Norwegian Christmas Cabbage

Before she died, I tried to get my Norwegian grandma to give me her cabbage recipe, but it was just "a little of this, a little of that" and I never felt confident enough to try. I've made this dish twice now, and it is delicious--tastes just like my grandma's. Thank you so much for sharing--it means a lot to me to have this connection to my roots.

Sour Cream Pork Chops

The sauce was really good, but the meat was still a little tough, even after cooking in the slow cooker. In response to some reviews, I added about 3 Tbs of Worcestershire sauce to the broth. I also added seasoning salt to the flour before dredging the pork chops in them. Finally, I carmelized the onions before adding them. I liked all of those touches, and the sauce was very good and savory.

Chipotle Crusted Pork Tenderloin

I wanted to follow this recipe exactly, so went to a special spice store to buy chipotle chile powder. I really think that 3 TBS must be a typo, because the flavor was overwhelmingly strong, and almost bitter. I liked the idea of this, but as written, it was just a disaster. More than that, because it's winter, I cooked it indoors on a cast iron grill skillet. As the chile powder heated up, it created almost a tear gas effect in the house. We were all coughing and eyes watering, and had to open up windows in 30 degree weather. My friends are now calling it the homemade pepper spray recipe.

Spicy Slow Cooker Black Bean Soup

I really loved this soup, but made quite a few changes (mostly to use up some leftovers). I used some extra bouillon to make the chicken broth stronger than normal. I also added four frozen boneless skinless chicken thighs. I added a medium chopped onion, 6 small diced tomatoes, and used a heaping tsp of fresh minced garlic instead of the powder. I decreased the amount of jalapeno and cayenne for picky guests, and omitted the hot pepper sauce, but I used about 2 heaping table spoons of chili powder, and 3 tbs of cumin. I cooked it on low for 16 hours, and then served with sour cream. My guests LOVED it. I think this will be a go-to meal in the future when I need to use up leftover chicken or veggies. It's a great canvas for experimenting, and you can't beat the price of dried black beans...

Kathy's Delicious Whole Slow Cooker Chicken

I really liked the sauce before I poured it over the chicken, but it seemed to lose some of its freshness and verve in the cooking. The chicken was incredibly tender, though, and I used all of the cooking juices as the liquid in a pot of brown rice. I caramelized a pan of onions, and served the rice over the chicken with the onions on top. The combination was pretty incredible, and I think I'll repeat it, but experiment a little with the marinade (perhaps more citrus?) to see if I can retain the amazing flavor before it was cooked.

Russian Cheese Salad

I made this the night before serving and it gave time for the flavors to blend. It was a really flavorful and wonderful part of our dinner, served on rye bread with other assorted meats and cheeses.

Slow Cooker Pulled Pork

I made this for a birthday dinner and my guests were gushing all night. I used pork butt because it's much cheaper and just trimmed it carefully before cooking. This is an instant hit and I will make it many times in the future.

Sam's Famous Carrot Cake

Fantastic, took this to work and was told by multiple people that it was the best carrot cake they ever tasted. Only made a few changes. I like more spice in my carrot cake, so I used 3 tsp of cinnamon, and 2 tsp pumpkin pie spice. As suggested by another reviewer, I boiled the raisins in orange juice, and they were delicious. (I'm going to remember that trick...thanks!) I also splurged on the "mix-ins" adding heaping cups of carrots, raisins, nuts etc. instead of carefully measured ones. The cake held together nicely. I topped it with the cream cheese frosting II (2-8oz. cream cheese, 1/2 cup butter, vanilla, and 2cups powdered sugar). It was fabulous. I will make this over and over.
