Italian Roast Beef I

This recipe turned out so tender and flavorful, I'm sure it will be used again and again. My Italian friend says she adds a can of beer to the broth and a couple of pepperocini peppers so I might try it that way next time. Get a BIG roast for this. I had a small one and there are no leftovers!!

Very easy recipe and my husband loved the creamy, rich soup. I served Garlic bread for dunking. Be sure to cook the bacon first rather than with the onions. Next time, I might try removing a few of the potatoes and pureeing them to add back to make the broth a little thicker.
