Lower Fat Banana Bread II

VERY moist! I added an extra banana and some nutmeg and cinnamon, otherwise it was very close to the original recipe. It's very very good, doesn't taste low fat at all!

Robin's Quinoa with Mushrooms and Spinach

Did not care for this and I love quinoa, mushrooms and spinach. I think it's the wine and vinegar that made it kind of weird tasting. If I were to make it again I'd definitely use feta cheese over goat.

Linda's Lasagna

Excellent! I used cottage cheese and no-boil noodles. This lasagna is different how you don't layer everything like other lasagnas. I think this helps it stay together. Very tasty! We split it into 10 servings and each serving was a perfect portion.

Rice with Black Beans

Excellent! What a simple, tasty, healthy and inexpensive meal. I'm giving it 4 stars only because I changed a few things. I followed others advice and did the following: 1. Olive oil instead of vegetable 2. Brown rice 3. Added a can of green chiles 4. Drained/rinsed the black beans 5. Added minced garlic 6. Topped it off with fat free cheese and sour cream. Will definitely be making this one again...thanks!

Cocktail Wieners II

These were pretty good. Used grape jelly and chili sauce as others suggested and cooked them in the crockpot. A little too much grape flavor but overall they were a hit. Thanks!

Ranch Crispy Chicken

Excellent! I used 4 large chicken breasts, 1 package of Ranch, a few slices of reduced calorie bread crumbs and a little bit of light mayo to spread on the breasts before shaking with bread crumbs. Chicken was moist and very flavorful, not to mention the entire process is quick and easy. Thanks for the great recipe, I will definitely be making this again!

It's Chili by George!!

Pasta With Spinach Sauce

This was not good at all! Mixing canned soup with pasta that's not baked makes it taste very fake. The ham in it seemed out of place and there's way too much spinach. I love spinach alfredo sauce usually too. I definitely won't make this again.

Lighter Banana Muffins

These were very good!! I made them into muffin tops as one reviewer suggested so it's like a big cakey cookie. I added a couple tablespoons of mini chocolate chips and used 2/3 Splenda and 1/3 sugar. Next time I will use egg beaters to lower the calories even more and maybe reduce the flour. Very tasty. I individually wrapped and froze some so they'll last.

Blueberry Buckle

Loved this! Used fresh blueberries that were slightly frozen when I mixed them in. I followed others advice and used 1 1/2 cups flour, added vanilla, used butter instead of shortening and used 1/2 brown sugar 1/2 white sugar for the topping. My topping wasn't so "crumby" (which is why I gave it four stars), it was more liquidy that I swirled on top with a knife. Still crisped up a bit and tasted fine though. Absolutely delicious with coffee.

Spinach Cheese Manicotti

Excellent! Next time I will make some minor changes and I think it will be even better. These are the changes I will make next time: Use 1/2 ricotta 1/2 cottage cheese, substitute basil for the parsley, put cheese on during last 10 minutes, real garlic instead of powder and I agree with a previous review...use a sauce you love!! Serving garlic bread with this dish is a must!

Chicken and Bacon Shish Kabobs

This recipe tasted ok but needs so many modifications and takes so long to prepare that I'm afraid it only gets 2 stars. Here are the changes I'd definitely make before making this recipe again: 1. Use fresh pineapple. 2. Marinate overnight and separate meat and veggies (if the mushrooms don't get hot enough, the bacteria from the raw chicken may not be killed.) 3. Make at least twice the sauce and save some for dipping. 4. Use small whole mushrooms. 5. I'd prefer no bacon next time.

Portobello Penne Pasta Casserole

My husband thought this was a 3, I thought more like a 4 or 5 so we'll give it a 4. A very interesting rich flavor to it, I also was leery about the soy sauce but went for it anyway...it just gives it a darker more robust flavor to the meal so it's not just like an alfredo sauce. Next time I think I will use regular mushrooms, the portobello shrooms were a little too much. I will also use more than 8 oz of pasta. Thanks for a tasty change!
