Slow-Cooker Chicken Tortilla Soup

I pureed the onions, garlic, chiles, tomatoes, and spices together before adding to the crockpot. I used 2 frozen chicken breasts and heated on low for about 7 hours. I used a can of corn instead of frozen, adding it about 30 minutes before serving. I shredded the chicken at the very end and topped each serving with 3 drops of (not fresh) lime juice, fresh cilantro, avocado slices, and 1/2 T sour cream. Tortilla chips were served as a side. Big hit.

Pesto Sauce

Easy, affordable, tasty. I finished the basil plant growing season by making 3 batches of this recipe. I filled ice cube trays with the sauce, froze them, and placed the frozen pesto cubes in a freezer bag for easy 1 Tablespoon servings in the future.

BBQ Pork for Sandwiches

I tried the latter part of this recipe on leftovers of a crock pot pork loin that hadn't gone over so well at the dinner table. I shredded the pork, mixed it with BBQ sauce, and baked it in the oven. It was a superb makeover of leftovers! And the BBQ sauce can be selected based on your BBQ flavor preference. Next time I'll probably use a sweeter, tangier sauce instead of the mesquite one I used this time.

Easy Cheap and Yummy Casserole

Easy, but not necessarily quick. It takes awhile to slice up the hot dogs and to then carefully arrange the slices so that the beans and cornbread don't touch. Could be a good activity to involve kids in.

Oatmeal with Apples

I used old-fashioned rolled oats instead of quick oats. Heated it in the microwave instead of on the stovetop and used 1 1/2 cups apple juice, 1 cup water, 1 1/2 cups oats. It was a little runny so next time I'll reduce the liquid. I ommitted raisins but added the rest of the ingredients as advised. I thought the sweetness was just right.

Apple and Spice Cookies

I had apples I needed to use up so I decided to try this recipe. I dove right in without reading any of the reviews, which is why I was stumped when the recipe didn't advise what to do with the apple juice. I ended up adding it with the nuts and apples. I followed the recipe exactly except I ommitted the raisins. I had serious doubts about how the cookies were going to turn out when the batter just didn't stay together well. As I rolled/patted/pieced mounds together on the cookie sheet, it reminded me of trying to mold wet sand. Keeping them together was a challenge, but they came out GREAT! They melt in your mouth with wonderful flavor! A note about the apple pieces--I think slivers or dicing would be OK, but mine still came out moist using rather large apple pieces. I wasn't sure if the apple was supposed to be peeled or not. Leaving the peel on turned out fine. Oh--and leave plenty of room between cookies. Those crumbly mounds really stretch out with baking.

Creamy PHILLY Pesto Chicken

Easy, quick, and delicious. I used fat-free cream cheese which did not fare well on medium heat. I tried it again on low and it was melted in about 2 minutes. Turned out great! I would advise doubling the recipe. It was so good we topped our broccoli with it along with our two chicken breasts. Every drop of sauce was devoured!

Easy Mexican Casserole

Following the advice of other reviews, I added the taco seasoning to the beef after browning it. I used reduced fat sour cream which didn't seem to detract from the flavor one bit. I crushed my tortilla chips pretty small. If you don't, the dish becomes more like nachos supreme rather than a casserole. It was well-received, as my husband asked me to make this dish again.

Debdoozie's Blue Ribbon Chili

I stuck to the recipe and to the suggestions made by the recipe's author in her review (she says use Pace's Picante sauce for the salsa). I served this to 3 families. It was a big hit with the kids and adults alike. The husband who was there without his wife said he wished his wife's chili was as good as mine!

Asparagus Quiche

Yum. Even my meat and potatoes husband raved about it. I'm guessing those who said the ingredients couldn't fit in the pie shell must not have known the recipe makes 2 quiches. I found that that pie shells could fit much more, so next time I'll probably try adding an egg. To save time, I used crumbled bacon in a jar found in the salad dressing section of the grocery store. I also used whole milk instead of half-and-half. Turned out yummy!
