These were very good. I didn't make any changes to the quantities in recipe and used a cheap brand (Aldi) of PB. I did find that once baked, you needed to be patient. They are not a "eat them right out of the oven" type of cookie. To keep them from spreading, I did not press them flat with the fork, only enough so you could see fork marks. But I had to cook them a few minutes longer because they were thicker. I let them cool a good 10 min. on the baking sheet because they were incredibly delicate, as in, fall apart like dust. They firmed up enough to carefully move them to a cutting board to firm up all the way. Once completely cooled, I would agree: these are the best peanut butter cookie ever.
