Holiday Cranberry Relish

I made this for our church women's Thanksgiving dinner and it was a big hit. Even the young children loved it. I never made a cranberry relish with so much fruit in it, but that is what makes it so good. I also used raspberry jello. Fabulous recipe!!!!!!!

Eggplant Croquettes

This recipe is awesome. My husband and I are not eggplant eaters, but I keep trying to find the perfect recipes to use it. this one is definitely a keeper. I, too, roasted the eggplant with olive oil as suggested by other reviewers. The microwave just didn't do it, and the taste was much better with roasting. Also added peas and finely chopped carrots. I also sprinkled salt on slices of eggplant before cubing and roasting, and let it sit to weep for 20 minutes to cut any bitterness eggplant has.

Rice Pudding

My husband says it is the best rice pudding he has ever had. To suit our tastes I eliminated the raisins and cinnamon and used xylitol and stevia to replace the sugar. Yum!

Roasted Garlic Bean Dip

Great taste. Very minor changes. Used 2 heaping teaspoons of minced garlic from a jar which I added to the sautéed onion just a minute or 2 before onion was cooked. Used fresh rosemary. Will use this dip as a sauce over zucchini noodles as well. I liked the taste of this dip with carrots

Bacon and Date Appetizer

I use smoked almonds, and I use 1/3 of a slice of bacon to wrap each date. First time I took these to a family reunion, they were the first appetizer gone. Delicious!!!!!!

Cheesy Baked Eggplant

We are not fond of eggplant, but this recipe has changed my mind. I did sweat the eggplant 20-30 minutes by salting each side of each slice. I blotted off the excess liquid that beaded up on each slice. I used our favorite spaghetti sauce, cottage cheese, and 6-cheese Italian blend. As other reviewers suggested, I used more sauce than called for and more cheese as well, according to our tastes. Delicious!!!!!

Italian Dressing Mix

A very tasty recipe. I used only 1 tbsp RealSalt and celery seed. Used 1/8 cup red wine vinegar and 1/8 cup red cooking wine to reduce the acidic bite. Increased water to 1/4 cup and used 1/2 cup garlic grapeseed oil.
