Country Scalloped Potatoes

Family favorite! I use a can of Campbell's Cheddar Cheese Soup instead of the soup listed. Freezes well and so yummy it keeps 'em asking for more!

Banana Crumb Muffins

I took a few people's advice and waited for the last 5 minutes to add the crumb topping. MISTAKE! By that time, the muffins had risen to nice peaks and the batter had firmed up on top, so the topping mostly fell right off onto the pan.

Blueberry Cream Muffins

An excellent and moist muffin. I made the recipe as it stands and feel it is a little bland and not terribly sweet. I think a crumb topping would probably be an excellent addition. I will also try using 1/2 brown sugar the next time around. To me these were the homemade equivalent to the boxed Duncan Hines muffins as far as sweetness and zip goes.

Braised Balsamic Chicken

I did as many suggested and used half balsamic vinegar and half chicken stock, but I think we would like it better with the full vinegar flavor. I added artichoke hearts and garlic cloves instead of garlic salt. Very yummy! Will make again!

Cocoa Banana Bars

Heavenly! A perfect blending of chocolate and banana. I agree about not changing a recipe, but I didn't have the exact ingredients needed; so I did have to improvise. I only had Hershey's Special Dark cocoa, so I added 1/4 cup sugar to my dark cocoa and batter. My 13 x 9 pan was in the dishwasher, so I made cupcakes instead and they baked for 25 minutes. The only reason they lasted 5 hours is because we weren't home to eat them!

Bacon for the Family or a Crowd

I go one step further. I place a cooling rack in the cookie sheet and lay the bacon on the rack. I place a second rack face down over the bacon. The bacon stays in place and I can flip the racks over wearing oven mitts. The excess grease drips down off the racks.

Cheesy Ham and Hash Brown Casserole

Tasty! I didn't end up having cream of potato soup, so I made due with 1 can cream of celery and 1 can cheddar soup. I will certainly be making this again and will try it as written. I did also double the ham since it was being served as supper.

Quinoa and Black Beans

My dad and husband loved this dish and my dad hates anything "foreign." I found it too spicy for my liking, but I am a wimp. I left out the cayenne and the spice was still just too much for me.

Mini Pumpkin Butterscotch Muffins

These were tasty, but I had trouble with the texture. The butterscotch chips were so firm in contrast to the softness of the pumpkin muffin. I also had a hard time with my muffins sticking to my non-stick pan (Which I also sprayed with non-stick spray.) It seems like the chips all sank to the bottom.

Swiss Chicken Casserole II

We have this quite often at our house due to basic pantry items required and the ease of preparation. It doesn't hurt that it tastes fabulous! I usually prepare this in the crock pot and cook on low for 5 hours. Cornbread stuffing can also be used instead of herbed dressing for a little variety.

Basic Ham and Bean Soup

I doubled this and am so glad I did! This was the best ham and bean soup I have had bar none. My dad has had a lot of bean soup in his day and he said he could eat this recipe daily. I only changed a few things to suit our particular tastes. 1-I used half water and half chicken broth 2-Once the soup was ready, I pureed 6 cups of it in my food processor to make it more stew like than soup like. I had enough for a meal with leftovers and 2 meals to freeze.

Peanut Butter Cup Cookies

I have made a similar recipe to this one before and like it much better. This cookie really lacks any peanut butter flavor. I did appreciate the advice about freezing the peanut butter cups, though. That really helped.

Incredibly Easy Chicken and Noodles

I took this to a church potluck and a whole group of little girls came over to tell me how awesome my chicken and noodles were...nice! A great rich flavor that is just plain filling comfort food. The only adjustment I made was to use "No Yolks" noodles in place of the frozen noodles since that is all I had on hand.

Austrian Jam Wreaths

These are so good! I made the first batch way too large. A small cookie goes a long way with these. These would even be good as single cookies without the jam...just a great flavor. I added them to my cookie baskets I gave out at Christmas and they were the biggest hit.

Award Winning Soft Chocolate Chip Cookies

I followed this recipe to a T and used one box of french vanilla and one box of chocolate pudding and they were beyond BLAND and quite dry. My husband, who will eat anything sweet, said they were really bad. I was going to send some with him to work and he said he didn't want my reputation as a good baker tarnished. They might be better with the salt and extra vanilla, but as the recipe stands these are not worth the trouble.

Chicken Broccoli Spaghetti

My husband and I enjoyed this recipe. I like bland food and he likes spicy fare. I also sent it to my sister who has 2 kids (6 & 8) and they loved it. I did change it a bit, though. I did not add broccoli. I used 2 large cans of chicken in place of the chicken breast and used the broth in the canned chicken in place of the water. I added 1/4c dehydrated chopped onion (the only way I will eat onion), 1T Herb de Provence, and 1 clove of garlic. This makes a lot of food. We had 3 meals out of it and my sister's family of 4 had enough for her to have a good lunch the following day.

Sage Pork Chops

Great flavor! I was running out of time, so I was only able to simmer the chops for 20 minutes instead of 45 so they weren't as tender as they could have beeen, but were still juicy and delicious. I also thickened the boullion with cornstarch to make a gravy to top the chops and mashed red potatoes.
