Damson Plum Cardamom Jam

Turned out very well! I did use sugar free pectin, along w/ 1/2c of sugar (1/4c truvia, 1/4c regular sugar). The plums I had were only about 3 lbs worth, but yielded 4 nice small jars of jam. It did set a bit light, but very good. I also added 2 cinnamon sticks. Would make again! Thanks!!

Banana Crumb Muffins

turned out well. I took suggestions as before, added 1/2c wheat flour, 1/2c splenda baking sugar - just check baking time at about 15 mins! very tasty!

Black Bean Turkey Burgers

Love this recipe! So quick and easy, fail-proof! Typically turkey burgers get dry easily in my kitchen, not with this quick recipe. Reheat great and no need for cheese or any other calorie adding toppings. I have made this a few times and subbed low-cal shredded mozzarella and shredded 1/2 cup smoked cheddar. Great on the stove top, as my bbq'r is on the fritz!

Pineapple Cheese Casserole

No Bake Cookies III

Simple, easy to do! I substituted 2oz. of semi sweet baking chocolate, added 1/2 c. more of oats, used SOY milk (slightly more than 1/2 c.), also used CRUNCHY peanut butter. Set perfectly - and as others suggested, this was much better at 3-4 mins of boil time. I didn't pre-measure anything & they set just fine. Great, simple recipe for no bake cookies! Will use again!

Amazing Butternut Squash

I found this to be really good! Very quick, simple & easy! I substituted plain Greek yogurt for the mayo and also honey for the brown sugar. Little bit oniony if you have a picky eater who doesn't much care for onions, but good side dish. I do not have a lot of experience w/ butternut squash, but really very quick & simple with the Trader Joe's pureed but. squash. Simple ingredients also make this a great choice. Give this a try! I also cooked into a muffin cake pan as I live in a studio & lack many baking dishes. Turned out great!

Spicy Feta Cheese Dip

Turned out great! Simple and easy use with feta. I used Greek yogurt and not a true measure - resulted in nearly 2 cups but I added a little more feta, etc.
