Coconut Curry Chili

I must start by informing you that I tweaked this recipe some. while I am certain that its perfect as is, I must say...this chili turned out to be THE BEST I have made! everybody (children included), gobbled this up. Now, here is what I changed, I sauteed 3 tablespoons of vegetable oil, 3 cloves of minced garlic, & diced carrots for 7 minutes then added frozen vegi crumbles (instead of turkey). I sauteed until cooked through. I then followed the second part of the recipe using 2 cans of tomato sauce(instead of soup) and using vegi broth(in place of water. I skipped adding the carrots & garlic to the tomato mixture since I already sauteed it with the "meat". I used fat free coconut milk and added it at the end, after everything is cooked together for the stated time. I followed the recipes measurements of the spices. I hope these are helpful suggestions for vegetarians out there that are craving a hearty or even meat eaters that want to try healthier options.

Savannah's Best Marinated Portobello Mushrooms

This dish was delish!! Loved it. The mushrooms turned out so juicy and meaty. I have been trying alot of vegitarian meals lately and so far this is at the top of my list.

Garlic Corn on the Cob

Yummy! I took the advice of some of the other reviews I have read, and used about 5 cloves of fresh minced garlic mixed with the softened butter instead of garlic powder.

Beefy Lentil Vegetable Soup

This was pretty yummy and satisfying. I changed the ingredients a bit. Instead of beef I used jalapano keilbasa, I used 3 cups spicey and 3 cups regular V-8, I added a can of potatoes, I used a cup of green onion, also added 3 cloves of minced garlic, and though I love mushrooms, unfortunatly I had none on hand. If I did, I believe I could give this recipe 5 stars. This turned out a little spicey just the way I like it.

Cheesy Corn Casserole

What can I say in one word? "Delicious!" This was a croud pleaser for sure. I did add some ingredients and I used jalepeno corn bread mix instead of regular. I ended up addind green onion and half a red bell pepper for color and flavor. I think this enhanced the recipe in a good way for sure.

Bourbon-Mango Pulled Pork

Yummy!! This was so good. I will make this recipe again for sure. I followed the recipe exactly how it was written. This has a very tangy and depending on what kind of B.B.Q. sauce you prefer, can be very spicey. If you want to tone down the spiciness, I suggest a regular B.B.Q. sauce, such as Kraft. I ended up useing a sauce that already had a "kick" to it, but what can I say, I love the spice!!

Easy Taco Casserole

I would recomend this to anyone who has children that love taco night. Not only is this easy, but my kids loved it. I used salad dressing, which added a different kind of zeztiness to the meal.

Teriyaki Chicken for the Busy Cook

This is a very simple yet delicious dish. My family and I loved it. Instead of just regular teriyaki sauce, I purchased a Soy-Vay Veri Veri Teriyaki brand which added some extra oomph. If your like me and love sweet yet a tad bit of spiciness, then you will love this.

I made this for my family tonight. The kiddo"s loved it and so did the hubby! Next time, I think I will tweak the recipe a little by adding minced garlic and some parmisian cheese. The great thing about this recipe is that it would be so easy to add your own little touch.
