Chef John's Banana Bread

I used canola oil instead of butter and still was very moist and tasty. I did butter the pan which gave it a nice crust! Went along with the cinnamon idea and agree with others on this. Also will use half the salt next time.

Pollo (Chicken) Fricassee from Puerto Rico

My apartment is smelling wonderful with a couple more hours of cooking to go...I added a can of"Pearls" black olives just because I love em. I used a Food Processor to pureé the veg. I'm bringing it to work tomorrow for our Valentines supper and will find out then how good it is as my coworker is Puerto Rican.

Spicy Shrimp and Grits

I added some turmeric for color and flavor and used snipped sun dried tomatoes so I had a nice thick consistency. I wish I would have added some cayenne pepper as I like my food spicy and the title of this was misleading. also used roasted red peppers from a jar instead of green peppers. Can be eaten after the combining in saucepan but I like the crust that baking gave it! Good enough for company or a Pot Luck.

Slow-Cooker Barbecue Ribs

Added Replaced half the ketchup with BBQ sauce. Kept all the ingredients for a multi layer of flavors! Most premade sauces have little or no brown sugar or Worcester sauce. Used Frank's Hot Sauce and an onion chunked on top.

Crispy Rhubarb Pie

Nice when you can't decide between a crisp and a pie. I went with the walnut pieces instead of crushed cereal. Less carbs and more Omega 3 healthy fat!

Chicken Tacos

I enjoyed the smokey flavor the Worcestershire added. Lemon juice was fine instead of Lemonade. I also made a pico de gallo with the sides along with the sliced iceberg lettuce. Laying the tortillas on a hot(electric) burner for a few seconds will give them a nice charred effect. Be careful tho! Lift off with a metal spatula. Wanted to add Avocado but forgot to buy a ripe one!

Ham Bone Soup

This was the best ham soup I ever made! I will agree with many and reduce the bullion in half as it was a bit too salty. I used 2 tablespoons of Better Than Bullion and would use one next time. I also added bay leaves and a splash of cooking sherry at the end along with a couple shakes of Frank's Hot Sauce. Also added carrots and had an onion roll to dunk in and mop up the good juice. If you want a serving quick do what I did...ladled a few cups of it into a sauce pan and simmered for an hour. This was my supper while the rest slow cooked the rest of the evening. Made a wonderful lunch! I want to make this a yearly tradition with the Christmas hambone.
