Lentil Soup
I took other reviewers suggestions and subbed 1 can reduced sodium chicken broth for 2 cups water, omitted the celery (didn't have on hand), doubled the spices, garlic and carrots, used diced instead of crushed tomatoes and used 1-2 T olive oil. I also added 1 tsp cumin. I added about half a bag of frozen spinach at the end and pureed the whole thing with an emersion blender. I drizzled balsalmic vinegar on each individual bowl- a definite must substitution. Delish! My husband loved it and he's not a big lentil fan. So glad to find a good, filling low-fat soup!

Marinated Grilled Shrimp
I thought this was one of the best grilled shrimp recipes I've ever had. I made a few small modifications: used apple cider vinegar and red wine instead of the red wine vinegar (didn't have any), reduced the olive oil to 1/4 cup (and probably could've reduced a little more) added a little extra garlic and cayenne (we like things spicy!) and used dried basil since I didn't have fresh. I grilled it on the Foreman since my husband wasn't home and he's the "grill man" and they turned out great. I doubled the marinate and saved half to which I added a can of diced tomatoes and a little pasta sauce to pour over angel hair. Delicious!

Sweet and Savory Kale
I really liked this recipe! I, too made some changes- reduced the sugar to 1 tsp (I may leave it out next time- don't think it really even needed it), left out the onion b/c I didn't have any and added extra garlic. I also followed another reviewers recommendation and reduced the liquid before adding the kale so it wasn't too mushy. I gave it 4 stars because of all the tweaking, but I did like it very much.
