Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Sep. 13, 2010
Excellent basic cookie recipe! I made it dairy free by using dairy free margarine in place of the butter. I did not melt the margarine first. Delicious!

Chocolate Chocolate Chip Cookies II

Fabulous! The only change I made was to replace butter with non-dairy margarine to accommodate food allergies. This recipe is a keeper!

Brooke's Best Bombshell Brownies

I followed the recipe exactly except for substituting dairy-free margarine for the butter to accommodate dairy allergies. These brownies are amazing. A definite keeper!

Delicious Raspberry Oatmeal Cookie Bars

Reviewed: Dec. 6, 2009
These cookie bars were delicious and very easy to make. I made them dairy free by using vegan margarine in place of the butter. I only had about a half cup of blood orange black cherry jam but it was plenty. I will definitely make these again. Thanks for sharing the recipe!

Angie's Perfect Dinner Rolls

Reviewed: Nov. 26, 2009
These are the very best rolls I have ever made and with my substitutions the best dairy-free rolls I have ever had. To accommodate our dairy allergies I substituted plain Silk soymilk for the milk and Earth Balance for the butter. I did not add any additional flour and I refrained from attempting to knead or roll out. This is a very wet dough, don't expect to handle it without well greased hands. The process does take a long time but is well worth the wait. I started the dough just after 9 am and they were ready for the oven after the Thanksgiving side dishes came out around 2:30 pm. The rolls were absolutely fabulous. Thank you so much for sharing!

Texas Pork Ribs

Reviewed: Apr. 7, 2009
This rub was amazing. I had 2 racks of pork loin ribs and the amount of rub was excessive. I was glad to have made such a large batch because now I have used it for pork loin chops and plan to use it on chicken as well. I doctored the sauce up a bit - adding some mustard powder, Worcestershire sauce and some red pepper flakes. 3.5 hours in the oven was all the ribs needed - I even skipped the grill step just basting them in the oven a couple of times. This ribs were amazing. I will be making them again! Thanks!

Bake Sale Lemon Bars

Reviewed: Mar. 17, 2009
I have made this recipe both as lemon bars and lime bars - both are delicious. If I am using fresh lemon (or lime) I add zest of the fruit too. The recipe reminds me of the lemon bars my grandma used to make. I make the recipe dairy free by using Earth's Balance dairy free margarine.

To Die For Blueberry Muffins

Reviewed: Jan. 15, 2008
As suggested by many previous reviewers, I doubled the batter but not the topping. There was still an overabundance of topping - so much in fact that it began to burn at the edges while the centers of the muffins were not quite set. Very tasty recipe but next time I will omit the topping and hope for golden brown edges.

Awesome Carrot Muffins

Reviewed: Dec. 6, 2007
Good base recipe. I omitted the raisins, added shredded apple, 1/2 cup of oatbran and substituted whole wheat flour for half the AP flour. I also followed the advice of other reviews and reduced the baking powder to 2 teaspoons and baking soda to 1 teaspoon. I also made a low carb version with splenda instead of brown sugar and added chopped walnuts. Both recipes were well received.

Best Lactose Free Blueberry Muffins

Reviewed: Nov. 21, 2007
I used this recipe as a base to tweak to suit my family's needs. It was an excellent base recipe and I think it is unfortunate that people think that there are not dairy/lactose free margarines on the market. There are many margarines that work for lactose sensitive and dairy allergic people - we use Earth's Balance with excellent results.

Vegan Brownies

Reviewed: Oct. 17, 2007
These brownies are terrific! We are eating vegan for health reasons so I substituted the 1 cup oil with 1/4 cup oil and 3/4 cup applesauce and used 1 cup sugar and 1 cup splenda. I also added about a 1/4 cup of flax seed meal. Absolutely delicious!

Chilaquiles II

Made at my husband's request. It was good but 30 tortillas seems extreme - I used 13 and still needed to add more tomato sauce. Topped with crumbled cojita cheese.

Super sinful and delicious salad. Substituted white vinegar for the white wine vinegar and used more bacon. The whole family liked it - including my preschooler and toddler.

My first try at homemade pizza dough and it was a hit with my family . Prebaked for a few minutes before adding toppings. I will be trying this recipe again tonight with whole wheat flour and flax meal.

Salmon Fillets with Creamy Dill

Reviewed: Mar. 29, 2006
Definitely made tons of sauce. I put about 2 tablespoons on each piece of fish and it was perfect. We used the extra sauce to dip steamed vegetables in and still had tons to throw out.
