The Best Bean and Ham Soup

So, I soaked the beans overnight and then put them on stove to cook for 30 minutes and rinse AND got on my treadmill. Long story short, did not put enough water in and you guessed it, they burnt!!! Oi. So, I used five cans of assorted beans, drained and rinsed and added a can of corn. Did the rest of the recipe the same and it is SO SO SO AMAZING!!!! Wow! Great flavor. Will do this with leftovers from Christmas Ham, too!

Absolute Mexican Cornbread

This is, bar none, THE BEST cornbread in the world!! I have to change things to gluten-free, so I reduced the baking soda to 3 teaspoons, reduced the sugar to 3/4 cup, and the salt to 1/8 teaspoon. These changes are because the gluten free flours react differently than wheat. Children LOVE this cornbread. (including my husband!!)

Easy Slow Cooker Ham

I am going to be one of those irritating people that change a recipe so much that it is dumb! But what I actually did is took a precooked ham, sliced it 90%, so it was still standing together. Put it in crockpot. Poured maple syrup between each slice. Then poured a 16 ounce bottle of GingerAle over it. Cooked it on high for 4-5 hours. It was fabulous!!!!

Three Cheese Garlic Scalloped Potatoes

Oh WOW!!! And nice that it had no flour since I eat gluten-free! All the adults loved it. With the garlic, it was a bit "mature" for children. I did the skim milk, fat free sour cream version. YUMMmmmmm!

Golden Sweet Cornbread

I have to eat gluten free, so used a flour substitute. Don't know if that was the problem or that I am addicted to the Absolute Mexican Cornbread out here! It was just a little plain.
