Potato Waffles

Once I got the non-stick situation sorted with my waffle maker, OMG......it was one of the easiest and most delicious things I have ever made. You should definitely make this recipe right now!!!! I also used a GF all purpose flour and it worked fabulously, although I did have to add some milk to thin it out since GF flour tends to make things a bit thicker.

Guacamole

Excellent...only things I changed was ditch the cayenne in favor of 2 jalapenos seeded & finely chopped & chopped the lime peel & added that too. Fantastic!

Boilermaker Tailgate Chili

This is probably one of the best chili's I've ever made. I made very few modifications to it and it was fabulous. First, not sure what a boilermaker is, so I used my slow cooker. I browned the meat (including 3 strips of real bacon. Don't do bacon bits!) and then threw everything into a slow cooker on low for 8-9 hours. I used a bean mix (whcih I drained and rinsed) and serrano peppers instead of green chile's as I like the flavor a bit better. I also cut the recipe in half (there's only two of us) which was good because my slow cooker couldn't fit anything more than what I made. Freaking Deee-lish!

Festive Turkey Meatballs

These were good although the meatballs on their own didn't have a huge amount of flavor. I also made them with 1/2 cup of oats instead of bread crumbs to make them gluten free. I also used 2 eggs as my eggs were on the smaller side. I did make the sauce with a green peppercorn dijon mustard and it was smokin' spicy! Next time will make with a slightly milder mustard I think. I don't mind some spice, but this was REALLY spicy. Will make these again.

Sara's Pumpkin Pie

This was quite good. I used a home made pie crust and it was pretty tasty. Will make it with a touch more cinnamon & nutmeg next time though as I felt those flavors were lacking a little.

Thai Pork Loin

i put this on top of rice noodles like some have suggested and it was just ok. It was kind of lacking in flavor. In the future, I think I'll make the pork and just use it as a meat dish and do something else on the side.

Slow-Cooker Barbecue Ribs

I love this recipe, but I don't put the ribs into the oven before putting them in the slow cooker. I just throw everything into the slow cooker & then just skim the fat before we eat them when they're done.

Turkey and Quinoa Meatloaf

I loved this. I divided it and put it into muffin tins just for the sake of a shorter cooking time and after about 20-25 minutes, they were done. My hubby hates meatload and he's not a big quinoa fan either, but he did ask me to add this to my permanent recipes! Dee-lish!
