Easy Cheesy Vegetable Soup

Comfort Soup a la Montreal a la Amy's version

This was good, but not amazing. Only one of my four kids liked it (even without hot sauce in theirs) and hubby would only pick out the potatoes, so I won't be making it again. My mom and I liked it though so it'll get eaten at least.

Breakfast in a Muffin

I made this muffin gluten-free and it turned out fabulous. Instead of wheat and all purpose flour I used 2c of Bob's Red Mill all purpose gluten free flour and 1/2 t. of xanthan gum. I cut the sugar, as others have done. I only used about 2/3 of the recommended amount and next time I think I'll only use 1/8 c. I used Cavendar's Greek Seasoning for my seasoned salt - yum. I also replaced regular milk with rice milk with no ill effects. I have heard that these freeze well, I'm going to stick some in the freezer and see because if this is true, my kids are going to LOVE me because usually it's cold cereal or a granola bar on school days. This is just as quick when you are grabbing some out of the freezer so hopefully it will work! Great recipe!

Curried Quinoa

A pretty basic recipe, as you can see from the other reviews, there is alot you can do with it. I made it as-is except for I used turkey stock instead of chicken broth because that is what I had on hand but it would be good with chicken broth too. Not my favorite because I like something with a little more pizzaz, but this was the first quinoa recipe I've tried that my kids would actually eat so that's great.

Watermelon Ice

Good flavor! This was yummy though we didn't make it as the directions listed. We followed step 1 and 2 and altogether skipped step 3. The ratio of ingredients is good, but instead I scooped some of it into molds and froze it into popsicles and the rest I just ate as a slush.

Zucchini Provencal

A yummy use for lots of CSA veggies and very easy. I disagree with the 2T of green pepper though, that seems wrong - why bother with just 2T? I like green pepper so I put in more, half a green pepper. I also accidentally made it without the green pepper (oops!) and it was also very good.

Herbed Chicken Strips

We've been trying different recipes with our CSA veggies and herbs with varied success on getting the kids to eat what we make. This recipe was a big hit though - no leftovers! It was especially good over couscous instead of rice.

Zucchini-Chocolate Chip Muffins

I gave it three stars because it may be that this recipe doesn't adjust well to gluten and casein free. I've done other zuchinni bread type recipes that converted just fine though so I had higher hopes for this one. I wouldn't make it again and I don't think i'd bother making it the regular way either, I just don't think there is enough flavor in the batter and i'm not a big fan of mixing cinnamon and chocolate.

Tarragon Tuna Salad

Really delicious! Some really nice herby flavors I don't usually eat. We paired this with Butternut Squash Soup with Sage Butter and Zippy Radish Salad (trying to use up our CSA veggies and herbs) and it made for a very colorful, fragrant, delicious lunch. Cooking it was almost as yummy as eating it because the smells were awesome! I love fresh herbs :-)

Butternut Squash Soup with Sage

Absolutely perfect! I am kind of picky about my Butternut Squash soup - it always seems to be to bland and sweet or to spicy. This recipe is awesome though. And the sage butter/fried sage is pure genius!
