Oatmeal Chocolate Chip Cookies I
Fabulous! I had to do butter and shortening because I didn't have enough of each on hand, and they turned off fantastic. In fact, I was still short 2 T of butter, and you can't tell. Perfectly crisp on the outside, but chewy and perfect on the inside. Mine took 13 minutes, and yielded 3 dozen, not 7.

Oatmeal Chocolate Chip Pancakes
Exactly what I was looking for! When my 3 year old said, "I want mini chocolate chip pancakes for breakfast!" my first thought was, "uh... no way buddy." But then I thought about how I could get him to eat a bunch of really healthy ingredients, under the guise of pancakes and chocolate chips and found this yummy recipe. I did grind up the oatmeal in the food processor, used whole wheat pastry flour, and almond milk, but otherwise used everything exactly as written and they were delicious. My 1 year old thought they were pretty amazing too. I'm going to freeze the rest for an easy weekday morning breakfast on the go.

Jay's Signature Pizza Crust
This is the first successful pizza crust I have made. All the others (some from this site) have been too bland, dense or chewy. The only problem we had was there the extreme crust to topping ratio - a 14 inch cast iron pan was too small. Next time, I plan to sub half the flour with whole wheat and also use a cookie sheet pan. Also, added tip - spray the crust with oil (Pam works fine) and sprinkle with garlic salt before baking.
