Creamy Carrot With Curry Soup

My proportions were totally off (only had 1/2 of the carrots on hand and used 2/3 of the stock and probably 3/4 of curry), but it was still incredibly delicious! Just ate two bowls by myself. ;) And the other reviewers are right - this is so rich, delicious and creamy, it doesn't need any cream or milk.

Creme Anglaise Sauce

Delicious! I made it while the souffles were baking and I guess - based on belatedly reading the comments below - it'd make more sense to make it the day before and let the flavor develop further overnight. In any case, it was absolutely delicious. Oh, and I didn't have heavy cream, so used half & half - still came out perfectly, if a little more liquid-y. :)

Grand Marnier® Souffle

Yum! They came out perfectly - and rose very nicely. I could see adding a little more Grand Marnier and orange zest next time for a more pronounced flavor, but it was a light, airy, subtle and absolutely delicious desert. :)

Biscotti Dessert Cookies

These are actually absolutely delicious biscotti - I LOVE the addition of whole wheat flour, it gives this a really unique and very rich taste. I did use a mixture of walnuts and pecans, as I didn't have hazelnuts. Made these two times in the last 10 days already! :)

Honey Cake III

This cake is delicious! :) It just came out of the over and my bf and I ate 1/3 of it, without even waiting for it to cool. The honey adds the edges some crunch and makes the middle more chewy - a delightful combination. Changes I made: 1) only used 1/3 of the sugar, but all the honey 2) only used 2 cups of flour and appropriately reduced the amount of orange juice 3) didn't have oil, so tried using butter, but it was rather hard to incorporate in the liquid part of the recipe, so I only used a minimal amount (maybe 2-3 spoons) 4) increased the amount of orange zest considerably and would increase it even more next time 5) added nuts (pecans) to half Oh, and mine was done in 40 min. Absolutely delicious and will definitely be making again. :)

Bread Pudding III

This was an excellent and incredibly easy- and fast-to-make recipe. I made a lot of substitutions - used vanilla soy milk instead of regular, skipped the butter entirely, used whole wheat bread and whole wheat hamburger buns and added walnuts - and it still turned out absolutely delicious. It's amazing how the cubes all melt together for a smooth pudding structure - I shouldn't have worried about what size I should cut them to start with! Anyway, next time I'm planning to incorporate some alcohol (baileys perhaps?) in the pudding for an extra flavor/kick. And definitely add more nuts.

Asian Salmon

Delicious. You can easily cut down on the olive oil though, as the sesame oil provides enough 'oiliness'. Also, try it with a simple side dish of leeks sauteed with ginger and - towards the end - sprinkled with orange peel and some OJ. If you liked this recipe, try also Grilled Salmon with Ginger-Orange Glaze.

Grilled Salmon with Ginger-Orange Glaze

This remains my favorite salmon recipe - and I've made it several times since I first discovered it in 2004. We recently made it with many substitutions, mainly due to lack of horseradish mustard, and it came out as wonderful as always. Also: the left-over, reduced marinade worked great as marinade/sauce for steak the next day! You should try it.

Whole Wheat Banana Nut Bread

I substituted apple sauce for all the butter, and it came out a bit dry, but still very tasty. My bf said it could successfully be a very interesting appetizer in a top restaurant. :)

My bf absolutely loves it. :) I used unsweetened applesauce instead of the butter, cut down on the sugar and skipped the nutmeg, and it still turned out great. Yummy when toasted.

Banana Banana Bread

Yummm! :) My first time baking banana bread and what a result! Will try replacing the butter with apple sauce and reducing the sugar next time. :) Maybe add nuts as well?! It keeps well for a few days and indeed is great toasted, but left out on the table, started going bad after 5-6 days. Just to warn you to eat it quickly!

Cinnamon Hazelnut Biscotti

I didn't have enough hazelnuts, so only used 1/2 cup, and I substituted apple sauce for half of the butter to make it more healthy, but they still turned out really good. But I think they'd definitely be better with more hazelnuts, so don't cut down on them! The nuts really give this a delicious flavor.

Jumbo Fluffy Walnut Apple Muffins

Yum. Baked these for my bf's bday breakfast in bed. A friend of mine described them as having the perfect mixture of texture - crunchy walnuts, juicy and soft apples. They were absolutely delicious when I served them the second day and still very good on the fourth day.

Nutty Wild Rice Salad with Kiwifruit and Red Grapes

Wow. :) One of my favorite salad recipes of all times! Have made it on several occasions and everyone has always loved it. It looks beautiful with all the different colors and has a wonderfully refreshing flavor. Can also serve as salad and side dish in one, if you don't have time to prepare both.
