Buffalo Chicken Sloppy Joes
This is really good, with a few minor changes... and I think I like it more as a warm dip than a sandwich. I didn't have red wine vinegar so I used what I had on hand, roasted garlic vinegar. I was also out of brown sugar so substituted white sugar. I cut the cheddar cheese in half as I'm attempting to limit my cheese intake. It turned out Amazing! I served it as a dip with slices of celery and it was eaten up in no time at a football party. Some people enjoyed it with Tostitos Scoops.

Tilapia Pitas
I was a bit skeptical of this recipe as I'm not a big fan of fish. I'm trying to eat fish at least once a week instead of a red meat. The only change I made to this recipe was used tomato basil feta cheese, Thomas' Sahara whole wheat pita pockets and omitted the salt. This was FANTASTIC, I will definitely make it again!!

Banana Chocolate Chip Cookies
These cookies taste Amazing. They are very moist, yet not as fluffy as a muffin. I followed the suggestions from others, used only 1 teaspoon of baking powder and also split the 1 cup of white sugar to be 1/2 cup white sugar and 1/2 cup brown sugar. I also used 3 ripe bananas. I also added a cup of oatmeal. Very Yummy!!
