Tangy Tuna Black Bean Quesadillas

Wow! I thought the combination of ingredients sounded strange, but oh my-delish! I substituted non-fat Greek yogurt for the sour cream, used real garlic and Franks redhot for the Buffalo wing sauce (because that's what I had on hand). Garnished with fresh avocado. New favorite!!

Lentil Soup

This is hearty and flavorful. It doesn't scream "lentil soup". (Not that there's anything wrong with that!). I used 11/2 Knorr concentrated beef stock in the little tubs in 8 cups of water, doubled the herbs and garlic, used 2 cups baby spinach and tossed in a smoked Parmesan rind for delicious depth. I used very little vinegar. I will make this again and again!

Vanilla Ice Cream V

Chicken Enchiladas I

Wow! I was pleased to find this recipe that does NOT use a can of condensed soup! I, too, left out the water and tomato sauce and instead used one can of Ro-tel, slightly drained. Next time I plan to use 1 1/2 cans. Big hit with my family-served with refried beans, sliced avocado and fresh fruit salad.

The Best Bean and Ham Soup

Lots of flavor, very satisfying and relatively easy to make. I did not have all of the broth called for, so I substituted water and a few bouillon cubes for about half of the broth. It was delicious with a green salad and jalapeno/cheese cornbread!

Grandpa's Classic Coney Sauce

I tripled this recipe for a crowd, but did not triple the sugar! It still tasted too sweet for my liking and I did not get any rave reviews from my guests
