I made this pie for my family for Thanksgiving, and it was delicious! I agree with another reviewer that you should try this recipe AS IS at least once before you make alterations. I did not add cinnamon, and nobody seemed to miss it! The pie has more of a rich caramel apple flavor than the light cinnimon/spice flavor of my tyipcal pie recipe. My fiance much preferred this pie, calling it "decadent." The butter adds a nice richness. I made a lattice pie crust (which was not as hard as I thought!) and poured the sauce over, according to the recipe. The crust turned out great and was a nice color. I suggest covering the edges with foil to prevent excessive browning. Like many others, I did not use 8 apples (I used approximately 6). Thanks for the great recipe!
