Grilled Lemon Chicken

Fluffy French Toast

First, this recipe needs to be doubled in order to make more than 8+ slices of thick French toast. Also, it is a bit bland for my taste-I prefer a sweeter custard. So, here are my changes: 2-1/2 c 2% milk, 5 eggs & 3 egg whites, 1/3 c fine granulated sugar, 1/2 c complete pancake mix, 2 tsp. vanilla, 1 tsp. cinnamon (+ more to sprinkle on as needed) and 1 tsp. nutmeg. I whisked everything together then put in the refrigerator over night. I used a very crusty, thick Greek white bread: dipped each side in custard for 30 seconds, let sit on a wire rack for 2 minutes then cooked on a griddle until light brown. Finally, I finished them off by baking in a 375 degree preheated oven for 5-6 minutes. So, overall this was an easy basic recipe to start with and modify to taste.

Award Winning Soft Chocolate Chip Cookies

These cookies were very moist and tasted good, but I do agree with some other reviewers who made changes: I halved the recipe, added 1/4 tsp salt, 1 tsp. baking powder and 1 Tbsp. vanilla. It is also very important to bake these until slightly golden brown. It is easy to underbake them (which I did the first time and ultimately, had to freeze them to be able to eat them without the cookie falling apart-didn't mind though because frozen choc chip cookies are wonderful).

Annie's Fruit Salsa and Cinnamon Chips

What a fantastic idea! I took this to a work potluck and it was huge success. The best part was the chips-I cut the tortillas into triangles, sprayed with butter-flavored cooking spray, shook to coat in a gallon-sized storage bag of cinnamon and sugar, and then baked. Wonderful! For the salsa, I used frozen blackberries, diced kiwi, diced apples, diced strawberries, and diced frozen peaches-at the last minute I added diced bananas. This doesn't stay fresh and pretty too long so I made it very early in the morning and it was perfect at lunchtime.

Hot Artichoke and Spinach Dip II

Excellent. I used reduced fat cream cheese, light Miracle Whip, double the mozzarella cheese, and more garlic. Even my kids loved it-and they are picky if it doesn't look like the "restaurant".

Cream Cheese Sugar Cookies

i wasn't sure that i liked these at first; the cream cheese flavor is a different spin on sugar cookies. But i have definitely decided that with the right icing, these cookies are great. i refrigerated them overnite, rolled them very thick, baked them for 7-8 minutes, and then frosted them. they kept their shape while baking (as long as they didn't get too warm)and stayed chewy for several days. Thanks!
