Microwave Bread and Butter Pickles

All I can say is, O.M.G.!!! I'm in awe of the taste of these pickles! They're so quick and easy to make, not a huge production at all. I'm not a huge pickle fan but decided to make some for the family because cukes were on sale today. I'm going to be going back for more cukes so that I can make a winter's supply of these! As per other reviews, I did cut the sugar in half, and I'm glad I did, because they're plenty sweet. other than that, I followed to recipe to a "t". You all know what I'll be doing in my kitchen tomorrow! :)

Cold Roasted Moroccan Spiced Salmon

I have to say, I really didt' enjoy the flavor, but I guess that's just a matter of personal preference. The taste of cumin, in particular, didn't seem to fit with the salmon for me. My husband, o the other hand, absolutely loved it. He'd definitely have it again. I'd make something similar in th future, but I'd use differenc spices, maybe dill, onion powder and paprika, cayenne and maybe soem garlic, then drizzle with lemon or lime juice.

Pumpkin Cheesecake Pie

I decided to try this because I definitely do NOT like pumpkin pie, but my husband does. I do like cheesecake, so i thought this might be a good compromise. Am I ever glad I tried it! It was a definite hit, and a recipe to make over and over again! I followed the tips of others and used a little extra cream cheese, a little less pumpkin pie filling, and 2 tsp pumpkin pie spice instead of the various spices. I also used silken tofu instead of eggs, as I have a child with a severe egg allergy, and this was a perfect substitution! I used one pre-made store bought crust and one homemade crust as per the directions, and the filling recipe was enough to fill both. It was very wet, so I kept it in the oven an extra 10 mins and that helped. It also firmed up more with time and chilling in the fridge. I must say, the homemade crust was MUCH better than the store-bought. Store bought is fine in a pinch but no true replacement for the real deal. I gave one pie to my parents, who also loved and devoured it. Thanks for a great recipe!!!

Warm Belgian Endive and Pine Nut Salad

This was a FABULOUS salad! I have been looking for ways to cook endive, and this salad is prefect. My son has a severe nut allergy, so I substituted sunflower seeds for the pine nuts, and it was amazing! I would serve this salad for company. Oh - I also added a tsp of maple syrup just to add an extra depth of flavor,and I'd definitely do it that way again :)

Peanut Butter Cookies IV

My son is severely allergic to eggs and nuts, so I substituted the eggs with egg replacer, and the peanut butter with soy nut butter. I shortened the baking time (based on other reviews) to 9 minutes, and they turned out perfect! There were just delicious - a little soft and chewy, but not too much, just like I remember them from my childhood! Now we have a safe alternative to PB cookies in our house, that tastes just like the "real thing"!

Banana Oat Muffins

I made these with egg replacer, since my son has a severe egg allergy. They turned out perfect! Delicious, attractive, and perfectly cooked at 18 minutes. I will definitely be making these again, since they are not going to last 24 hours before being eaten!

Eggless Eggnog

This egg free eggnog recipe is AMAZING!!! My son is severely allergic to eggs, and I am uncomfortable having regular eggnog in the house. I tried this recipe on New Years Eve at a family party. 6 people tried this eggnog and they all LOVED it! It tastes just like the real thing! Thank you, thank you!! I now have a safe solution and it's very cost effective, too! I tried it two ways, and both were equally delish: I made it with fat-free vanilla pudding mix and used skim milk, and it was wonderful, and still had some of the thickness you'd expect from an eggnog, but not too thick. I also tried it with 2% milk and regular pudding mix and it was just as good. I will be using the fat-free method! Guilt-free eggnog! I also did not use the run extract. I added an ounce of white rum to my glass, and that's what the others did as well. It was wonderful, and if you didn't say anything, nobody would EVER know the difference!

Easy Sugar Cookies

These cookies were the best sugar cookies I have had. They did not last more thann the evening I made them because they were devoured! They were tender in the middle, which everybody loves. My son is severely allergic to eggs so we used egg replacer powder instead of the egg and they turned amazing. Thanks! I will be making these again tomorrow!
