Nanaimo Bars III

These were a special treat and unusual in their own way. The reviews about whisking the chocolate into the egg slowly before adding it back to the heated chocolate were very helpful. I used a sauce pan on low-simmer for the first layer rather than a double-boiler...1/2 cup butter in first layer to mix graham cracker crumbs and 1/3 cup butter in the second layer to cream the confectioner's sugar and doubled the ingredients in the third layer. Thanks for the recipe!!

Yummy Sweet Potato Casserole

Tastes like sweet potato pie. It will make anyone like a sweet potato dish at holidays. I baked my potatoes first rather than boil, otherwise followed the recipe.

Banana Crumb Muffins

This recipe had so many reviews I decided to make it using reviewer comments. The muffins were moist and delicious, this recipe is a keeper. I used 4 bananas instead of 3 for more banana flavor. 1/2 cup of white sugar and 1/4 cup of brown sugar instead of 3/4 cup white sugar. 1/3 cup canola oil instead of 1/3 cup melted butter. I also added 1 tsp vanilla, 1/2 tsp nutmeg, 3/4 tsp. cinnamon and 1/4 cup chopped walnuts to the banana mixture. I was mashing and mixing by hand til I sharpened up and decided to use the electric mixer. The baking time was right on. All the changes from previous comments would have had little effect on the original recipe so it deserves 5 stars on it's own merit. The only alteration I would add would be to the reviewers who said to add the crumb topping 5 minutes before they were done. I tried that too and the muffins had risen so high the topping was mostly rolling off and onto the hot pan. Good idea but next time I will wait until just before the muffins get to the top of the cupcake papers. The topping will stay on the muffins and the top of the muffins should be sufficiantly firm enough to prevent the crumb topping from sinking into the muffins. Thanks for the recipe Lisa!!!

Stuffed Mussels In Spicy Tomato Sauce

This is the first time i have ate mussels. When I started I was reminded of the fish market in Japan about 10:00 am when the sun is coming up. And they are ugly especially with the beards!!! But since I had bought all the ingredients I kept going. following the recipe and video exactly, the steps couldn't have been easier. The end result was very good, I will definately make this again, thanks for the recipe.

Baked Asparagus with Balsamic Butter Sauce

4 tbsp butter, 2 tbsp balsamic vinegar and 2 tsp of soy sauce. lightly browned butter, added balsamic vinegar to reduce a bit. removed from heat adding soy sauce. sauteed slices of yellow onion with a clove of garlic in olive oil as an addition. added onions and poured sauce when asparagus came out of oven.

Double Layer Pumpkin Cheesecake

Used 1 cup of sweet potato pie filling, couldn't find pumpkin. 1 tsp vanilla and 1/2 tsp ground cinnamon. Other than that I followed the recipe. It was delicious.

Orange Glazed Carrots

Grandma's Green Bean Casserole

With the high reviews I was greatly disappointed. I prefer fresh green beans, they have better taste and texture than canned french style. Also the only thing better than fried onion rings from a can is taking time to dip in buttermilk and dredge and fry your own.
