Heirloom Tomato Salad with Rosemary

Absolutely delicious! Served cold and topped with crumbled feta cheese. Loved it so much, I made it again the next day. Can't wait to have it for lunch with cottage cheese!

Chipotle Crusted Pork Tenderloin

Hands down the BEST recipe I've found on Allrecipes! I tripled the recipe for a 5# boneless pork loin that I marinated in pineapple juice overnight. I have ground chipotle chile (with no added spices) so only used the 3 Tbsp. Cooked part of the loin with one cup of pineapple juice in the crockpot on low for 6 hours. Shredded and used for tacos. The other half I baked in the oven, using some pineapple juice in the baking dish. Sliced and served with brown rice. YUM!! I will be making this dish over and over!!

Heavenly Halibut

Third halibut recipe I've tried from this site and this one is it! Only addition was sprinkling some Panko on top. I baked for 10 minutes then broiled for a few more. Delicious!!

Fierro Chicken

Picnic Marinated Summer Slaw

Light, crunchy and delicious! Followed recipe, using 12 oz of shredded cabbage with carrots and swapped Splenda for sugar. Dressing was perfect for this amount of ingredients. Marinated for 6 hours and it was excellent! Hubby thinks it would be great served on fish tacos..maybe I'll try that next time!

Spinach and Orzo Salad

Delicious! Because I had it on hand, added sun-dried tomatoes and used toasted almonds as I was out of pine nuts. Shared with the neighbor, who loved it as well! Leftovers today - YUM! Thanks Christine!

Chicken Asparagus Roll-Ups

Delicious! Took advice of others and spread some of the sauce on top of the chicken before adding the cheese. Used 5 stalks of asparagus as they were thin. Otherwise followed instructions. Will make again!

Orzo with Parmesan and Basil

This is my go to side for casual or company dinners! Love to add steamed asparagus and cherry tomatoes. Use freshly grated Parmesan and approximately 1 1/2 cups of broth and it comes out perfect!

Roasted Red Pepper Tapenade

Absolutely delicious! I used the whole 12 oz. jar of peppers, no capers and cut olive oil to 1/4 cup. Served with sliced, grilled baguette. Everyone loved it and asked for the recipe.

Pasta with Fresh Tomatoes and Corn

Just had this for lunch and it was delicious! Used 2 ears of cooked corn, extra freshly grated Parmesan cheese,chopped garlic and fresh basil (no dried). Very light and tasty!

Grilled Corn Salad

This salad rocks! I was looking for a healthy, tasty side dish for a camping trip with family and I found it with this salad. I added a chopped avacado, fresh lime juice and jalapeno. Everyone loved it!

Slow Cooker Cilantro Lime Chicken

I'm giving this a 4 because I changed it up a bit. Otherwise, I would give it a 5! I used 4 large boneless, skinless chicken breasts, 2 cans of Rotel with lime and cilantro, 1 can of Rotel with medium heat chilies, extra cilantro and a double batch of Taco Seasoning I from this site. Easy and delicious! Will make this over and over again!

Halloween Brain Dip

15 minutes? I spent easily 45! Even being ultra careful stemming the cauliflower head, it fell apart. I used 10-15 toothpicks and it was still very wobbly. Unable to find the rope fruit leather, so sliced up fruit roll-ups. They would not stick or stay into the cauliflower crevices and caused the "brain" to fall completely apart. Brain went into the trash along with fruit roll-ups. Waste of money and time!
