About this Cook
I'm a stay-at-home mother of 3, currently taking classes to get into the RN program. I cook out of necessity and love trying out new recipes. I'm a frugal cook, though, and shy away from any gourmet that is more about presentation and less about flavor. I like to rotate my meals and am always looking to add more to my favorites.
My favorite things to cook
I'm a big fan of pancakes and bacon dinner, but at the request of my husband I only do that a couple times a month. My favorite things are anything that my kids will eat without complaint, as nothing ruins a mealtime quicker than a whiny child poking at their food.
My cooking triumphs
I've made some impressive birthday cakes - impressive to me, but filled with flaws. Still, they are fun to make and I always get a great sense of accomplishment. I'm not a great adventure cooker, I rely pretty heavily on recipes. When I do manage to pull something together all on my own, I feel like I'm "The Woman", even if all I did was brown some meat, add a veggies, noodles and sauce.
My cooking tragedies
Where shall I begin? Ha-ha, that's why I'm not a good adventure cooker. I can only think of one time when I took my family out to dinner because what I ate was inedible. I have also apologized profusely at the table as we choke down our meal and I promise never to make it again. I believe I've even gotten up from the table once and destroyed the recipe then and there as to not have the displeasure again.

Slow Cooker Chili II
Admittedly I usually use McCormick for chili (powdered packet), but I wanted to try something different using my crock pot. All my kids whined that I was "making chili AGAIN!" but then shocked us all when they loved it. I did not have cannellini beans, but used pinto beans with jalepenos instead and substituted crushed tomatoes for the puree. Definitely will be making again - thanks for the recipe!

Six Week Bran Muffins
I adjusted this for 24 servings and then misread the recipe and did not add the separate large batch of bran cereal; I was thinking how odd that the amount of bran was so small. Ha!! I also had to use flaxseed for the egg (ran out today) and I added 1 tsp of vanilla and 3/4 tsp of cinnamon. The muffins were dense but very tasty! I know my kids will gobble them up. I will definitely remake this recipe and add the correct amount of cereal. The cinnamon really shines and I was surprised it wasn't included in the ingredients. Appears to be a versatile recipe...pumpkin spice would probably be a nice addition in fall.

Cowboy Cookies III
I used the suggestion for 3/4 cups for sugar, 1 egg/1 egg yolk plus 2 tsp vanilla - it was my favorite Christmas cookie on the platter!! I think I will try it with raisins to see if it could satisfy my husbands oatmeal raisin cookie craving. GREAT RECIPE!!!
