Take The Night Off Slow Cooker Pineapple Chicken

I made this last night and really liked it. It could have been a bit more moist, so I'd recommend reducing the cooking time by an hour. I do the Paleo diet (ie no added sugar) so I skipped the brown sugar and it still turned out sweet enough. I would also recommend adding a 1/4 cup of stock with some flour or cornstarch to thicken up the sauce, but otherwise, it was fantastic. Great little meal I will cook again!

I'm not used to enchilada sauce so this was a different taste for me, but overall it was good and easy. It freezes easily also and makes a great lunch weeks later.

It was way too thick for my tastes and the flavors were overpowering. If I were to make it again, I'd use a lot for liquid and tone down the wine.

Rosemary Ranch Chicken Kabobs

I have made this twice now and really like it. Instead of kabobs, you can simply lay them on tin foil on a cookie sheet and broil.
