Swiss Cheesy Cauliflower

The cream sauce is alot like the Cream Soup Base recipe on this site... So, I excluded the salt in this recipe and substituted 2 cubes of chicken boullion and because my family likes pepper, I always add 1/2 teaspoon of black pepper as well. For me, the trick to less "sauciness" is to let the cream base thicken over low heat. Once it's thickened, I add the cauliflower and cheese and mix all ingredients with my hand mixer. I thought the cheese and cauliflower are welcome companions! Yummy!

Salsa Chicken and Potato Packets

I read the reviews about blandness and also the one who preseasoned the chicken breasts, so I created my own marinate for this easy recipe... 2 T Italian Dressing, 1/4 tsp chili powder, 1/2 tsp black pepper and 1/2 tsp garlic powder, whisked together, then brushed onto chicken breasts before I poured the 1/4 C of salsa on them. I used frozen chicken breasts so I cooked the packets on 375 for 1 hour. It came out DELICIOUS and very tasty!!! Both the potatoes and chicken were very tender and flavorful! This recipe is a keeper and GREAT when prep time is at a minimum!!!!!

Speedy Salmon Casserole

After reading many of the reviews of this recipe, I made a couple of changes that increased its rating from a 3 to a 5... First, I used the Herbed Garlic Mashed Potato recipe from this website as a base(I reduced the amount of thyme from 1 T in that recipe to 1 tsp, which was a wonderful change since no seasoning overpowered another). Secondly, I used salmon filets instead of canned salmon (...simply because I prefer the taste of fresh or frozen filets over canned). Thirdly, I added 1 tsp of Old Bay seasoning to the salmon mixture and cooked it for about 15 minutes in the saucepan over medium heat. Not only did the extra time thicken the mixture, but the flavor was excellent! At that point, it could have been served alone, honestly. My family absolutely loved it and gobbled it up!!!! My girls are 2 and 3 years old, and my husband grew up land-locked, so adding seafood to our regular rotation of meals is a treat for me!! :)
