Authentic Huevos Rancheros

Grandma Johnson's Scones

Amazing recipe! I used it to make apricot ginger scones and they came out beautifully. I added 1 tsp vanilla, 1 cup dried apricots, diced, and 3/4 cup crystalized ginger, diced. It may be because of my additions, but I found that they needed a little longer than 15 minutes, when the tops were golden brown they were perfect.

Goat Cheese Stuffed Tomatoes

This is my favorite appetizer. For those who love goat cheese, this is an incredible treat - and easy to make! I used my toaster oven and they came out beautifully.

Best Ever Jalapeno Poppers

These were amazing - possibly the best poppers I've ever had. They were noticeably better, fresher, and healthier tasting than restaurant poppers, which are often the frozen variety. As someone else mentioned, they are incredibly labor intensive, so they're not something I would whip together without a darn good reason. But when that reason exists, it's well worth the work.

Tofu Parmigiana

This recipe was very basic, easy to follow, and delicious. For my husband, who does not like tofu, I used frozen chickenless patties, defrosted, in place of the tofu. They did not need breading or frying. I did make half of the recipe with tofu. I found that the thinner slices of tofu fared better, I recommend slicing it thinner than the recipe suggests. When I fried the tofu, much of the breading fell off, but it was still delicious.

Artichoke & Spinach Dip Restaurant Style

This was really good, it tasted like something you would get in a restaurant... only more fresh and better all around. I cooked it for the majority of the time recommended, then took it out, poured it in a bread bowl, and put it back in for a few minutes. Delicious!

Banana Banana Bread

This bread recipe is awesome. I've made it a few times and it comes out really well each time. I haven't tried any serious variations. I do sprinkle a little brown sugar on top before I put it in the oven, since the top tends to brown and is a bit more bitter than the bread.

Vegetarian Baked Pasta

This pasta was very good and easy to make. I used parmesan instead of gorgonzola and added a few handfuls of fresh spinach to the mushroom mixture. My husband loved it but I can't give it five stars because, to me, it tasted pretty standard. I bet if I used the gorgonzola, it would have that dynamic factor I'm missing.
