Pumpkin Pie Cake

Followed the recipe exact, just replacing the walnuts with macadamia nuts. Covered with foil for 45 minutes (as others suggested) and uncovered the remaining time. The topping became browned on edges and so I covered edges with foil, allowing the middle to remain uncovered because it was still soupy. I baked for over 1 hour and 30 minutes, and it finally appeared done. I left it sitting to cool. Cut into it later and it completely crumbled apart, seeming like it could have baked longer. I love pumpkin, and this was edible, but it is not the Pumpkin Crunch that is famous on our island :(

General Tao Chicken

This was quite ambitious for me to take on alone; definitely a two-man job, especially for clean-up. Regardless, this recipe came out great after following RDean's suggestions of limiting the vinegar and ketchup (I used rice vinegar), and adding chiles (I used lots of chili paste to add needed flavor). After burning my arm and face with hot oil I decided to bake the rest of my chicken. I was concerned the breading would not bake well, but it actually did. It wasn't the best breading, and it fell off the chicken some, but it was General Tso Chicken for sure. Overall, not worth the work.

Indian Curried Barley Pilaf

I LOVE this recipe! Cut the butter and just use enough oil to saute the onions and barley, double the spices, replace chicken broth with vegetable broth, added mushrooms, zucchini, and cherry tomatoes. The raisins with the spices were amazing. Served with salmon.

Jeanie's Falafel

This makes a great falafel. I added one egg and then added water as needed in order to make it stay together. If I had not added water it definitely would have fallen apart. Left out the cilantro and parsley. I recommend using a food processor to mash the beans and garlic, and then stir in the finely diced onion. My food processor completely pulverizes onion, so I just dice it and stir it into whatever I am making.
