Coconut Shrimp I

MMM!! Heaven sent! I have been longing for coconut shrimp (live out-of-the-country) and this recipe went beyond my expectations! I used Kona Fire Rock (Hawaiian beer) and added a little bit of black pepper and parsley to the batter. I used canola oil for frying and added in some coconut oil to enhance the taste (amazing!). I also made the suggested dipping sauce and it was fantastic! I had 6 guests over on Good Friday and they all raved about the shrimp! Thank you for a great contribution. I think I'll make this my Good Friday tradition. :)

Butternut Squash Soup

I enjoyed this easy recipe very much! I definitely did not add in all the cream cheese, however, as it would have been way too rich. I only added 2 tablespoons for the whole batch. I also added 1 cup of apple cider to the soup and used chicken broth. Before serving, I sprinkled some ground cloves on top for garnish. It was delicious and I froze the leftovers. Thanks for sharing!

Megan's Granola

Yum Yum Yummy! I was sick of my old granola recipe (which was good, but it's been 2 years of the same thing!). I tried this and it's delicious! Though, because I'm health conscious, I did alter things a bit: I added 1 C. ground flaxseeds, halved the sunflowers seeds and added 1/2 cup of crushed pumpkin seeds, used only almonds for the nuts (not a big fan of pecans or walnuts), only used 2 T. of brown sugar, and instead of vegetable oil, I used coconut oil (I HIGHLY recommend using this - the health benefits are incredible and the flavor is outstanding! - even if you don't like coconut). I used 1 C. raisins and 1 C. dried cranberries. I also used all-natural ingredients. This is fabulous atop organic yogurt finished with fresh fruit :) Thank you for sharing :) *ALSO, if you want your granola a little sweeter, a good alternative is to add in some agave nectar to the liquid mix...incredible!

Aunt Anne's Coffee Cake

I turned this into an almond coffee cake. It was wonderful!! I did 1/2 white flour and 1/2 almond flour. For the streusel, I added chopped almonds, a bit of nutmeg, and used 1/2 white sugar and 1/2 brown sugar. I sprinkled the top with almonds, as well. I put half the streusel in the middle and half on top. I also baked mine in an 8x8 as I think a 9x13 won't make a thick enough cake. This is fabulous traditional coffee cake recipe and a great basic to go by when experimenting with other varieties. Thank you!

Smooth Sweet Tea

YUM!! I don't drink sweet tea, but my southern husband loves it. I decided to make him some today and found this recipe. I used an all-natural sugar substitute (I can't talk myself into drinking pure sugar :P) and it turned out AMAZING. Thank you for sharing this recipe, especially since it exposes the secret of baking soda. I'll be making more as my in-laws are coming to town next week.

Chocolate Chocolate Chip Cookies I

I must say, these are pretty delicious. I didn't use chocolate chips or walnuts, but instead opted to make white chocolate chip macadamia nut cookies with this. They were amazing! I did make a few small changes. I used 3/4 c. white sugar and 3/4 c. packed brown sugar instead of 1 1/2 c. white sugar. Also, I baked mine on 375ยบ for about 10 minutes (though I line my sheets so it takes a wee bit longer than normal). Thanks for sharing this....just what I was looking for.

White Chip Chocolate Cookies

This recipe is absolutely delicious. Not only did I gorge myself on the dough, but the cookies as well. I made several of these for friends and family and I'm sure they'll all love them! Thank you for your recipe, I'll be using it for a long time to come!

Brooke's Best Bombshell Brownies

These brownies are quite delicious!! I usually like cakier brownies, but was in the mood for fudgy. I tried this recipe and it was great. The only thing I would change is the thickness. They were a little too thin for me. Overall, great recipe, though.

Skinny Scalloped Potatoes

This dish was quite disappointing to me. It came out extremely runny even after I'd cooked it a little longer and let it sit. I also used cheddar cheese in mine as opposed to the Swiss (I'm not a fan of Swiss). I suggest using more flour in the recipe and also sprinkling onion and garlic powders on the potatoes.

Best Ever New Zealand Pavlova

Absolutely delicious! This was my first time baking and trying Pavlova! I recommend trying this recipe as it worked out extremely well for me. I followed others suggestions to pile the outside walls of the cake high before baking as it tends to spread out a little while in the oven. If you can't handle the sweetness, top it with raspberries as they will help balance it out.
