Coconut Shrimp I
MMM!! Heaven sent! I have been longing for coconut shrimp (live out-of-the-country) and this recipe went beyond my expectations! I used Kona Fire Rock (Hawaiian beer) and added a little bit of black pepper and parsley to the batter. I used canola oil for frying and added in some coconut oil to enhance the taste (amazing!). I also made the suggested dipping sauce and it was fantastic! I had 6 guests over on Good Friday and they all raved about the shrimp! Thank you for a great contribution. I think I'll make this my Good Friday tradition. :)

Butternut Squash Soup
I enjoyed this easy recipe very much! I definitely did not add in all the cream cheese, however, as it would have been way too rich. I only added 2 tablespoons for the whole batch. I also added 1 cup of apple cider to the soup and used chicken broth. Before serving, I sprinkled some ground cloves on top for garnish. It was delicious and I froze the leftovers. Thanks for sharing!

Megan's Granola
Yum Yum Yummy! I was sick of my old granola recipe (which was good, but it's been 2 years of the same thing!). I tried this and it's delicious! Though, because I'm health conscious, I did alter things a bit: I added 1 C. ground flaxseeds, halved the sunflowers seeds and added 1/2 cup of crushed pumpkin seeds, used only almonds for the nuts (not a big fan of pecans or walnuts), only used 2 T. of brown sugar, and instead of vegetable oil, I used coconut oil (I HIGHLY recommend using this - the health benefits are incredible and the flavor is outstanding! - even if you don't like coconut). I used 1 C. raisins and 1 C. dried cranberries. I also used all-natural ingredients. This is fabulous atop organic yogurt finished with fresh fruit :) Thank you for sharing :) *ALSO, if you want your granola a little sweeter, a good alternative is to add in some agave nectar to the liquid mix...incredible!
