These were wonderful. I do have to say the flavors of the fish & dressing compete with eachother a bit. So next time I will marinade the fish like the recipe & make a simpler dressing or season the fish more simple & make the dressing like the recipe. Regardless, the tacos were great! Make sure the adobo sauce is from chipotle peppers, not chiles. Went to Mexican store & learned that it would be easy to buy the wrong sauce. You only use the sauce from the can of peppers, not the peppers. Discard peppers or use for something else. One can yields approx. 1/2 C. sauce. The dressing makes quite a bit once you add the sour cream & other ingredients. You could cut the dressing recipe in half. Unless you use alot, you don't need this much. We have alot left & will use it for something else. We used rockfish & it was a great fish for fish tacos!!
