Great Pumpkin Dessert

This was simply amazing! If you like pumpkin pie you will love this! I let it rest in the refridge over night & it was just how we like our pumpkin pie...cold with homemade whip. I did omit walnuts. I will use the other reviewers suggestion of mixing butter with cake mix prior to pouring over the pumpkin mixture before baking. It was sooo good! Everyone loved it & my son said first bite....this is amazing!! My husband couldn't help himself & went back for thirds! YUMMMMMMOOOO!

Quick Egg Roll Dipping Sauce

Was ok. Better then not having a dipping sauce. Quick & easy! If you don't like vinegar much, you may want to skip this one.

Grilled Fish Tacos with Chipotle-Lime Dressing

These were wonderful. I do have to say the flavors of the fish & dressing compete with eachother a bit. So next time I will marinade the fish like the recipe & make a simpler dressing or season the fish more simple & make the dressing like the recipe. Regardless, the tacos were great! Make sure the adobo sauce is from chipotle peppers, not chiles. Went to Mexican store & learned that it would be easy to buy the wrong sauce. You only use the sauce from the can of peppers, not the peppers. Discard peppers or use for something else. One can yields approx. 1/2 C. sauce. The dressing makes quite a bit once you add the sour cream & other ingredients. You could cut the dressing recipe in half. Unless you use alot, you don't need this much. We have alot left & will use it for something else. We used rockfish & it was a great fish for fish tacos!!

Best Steak Marinade in Existence

Fantastic! Used fresh garlic (4 cloves) instead of garlic pdr. Used fresh basil instead of dried. Put it all in a Mason jar & shake. Tenderized top sirloin steaks first before marinading them. Wow, delish!

Chicken Pot Pie IX

Used suggestions from reviews. Thank you everyone! Added 4 oz. thinly sliced mushrooms to onions & sauteed. Cut back on butter to 1/4c. Added 1 med. Yukon Gold potato to veggies. Added poultry seasoning & doubled fresh cracked pepper. Used more broth & flour to the sauce mixture. I used the white meat from a rotisserie chicken (savory seasoned one). I brushed the bottom crust with egg white & baked for 7 min. before fillling the crust & also did the same thing to the top crust once it was placed on top & ready for oven. 40 min in 375 degrees oven. If you like mushrooms it added so much to it! Could also add fresh garlic to the onion/mushroom mixture but I forgot. IT WAS AMAZINGLY FANTASTIC! My family went crazy about it & wanted more! I also doubled the recipe & made extra filling to freeze 1/2 of it to put in a pie crust for a meal at a later date. Awesome!

Mahi Mahi with Coconut Rice and Mango Salsa

Unbelievable good! My kids said it was the best fish they've ever had! I made the rice & mango salsa too and added grilled zucchini as a side dish. Only thing I changed was I added more fresh garlic to the marinade. I couldn't find a ripe fresh mango so I had to use Doles jarred mango & it was wonderful. Would recommend fresh if you can get it though. Yummy! Thank you! I added a photo of our meal because she didn't have one on this recipe page. Enjoy!

Cajun-Style Catfish

Very good! I added some sea salt to the fish for added flavor. Also used olive oil/butter mix instead of the butter flavored spray. I sauteed some shrimp in the fish/seasoning drippings after fish was cooked & added shrimp to the top of fish on serving platter. Looked amazing & tasted great!
