Barley Bake
Very good. I would suggest roughly chopping the sliced mushrooms if you already purchased them sliced. My mushrooms were thickly sliced, and I would have enjoyed this more if I had a mushroom in every bite. We are big mushroom fans.

Cream of Carrot Soup
A really fast way to get dinner on the table when you don't know what to make! It definitely doesn't serve 5 hungry people though, unless as an appetizer soup. I'd say double the recipe to have enough for dinner and for left overs.

Mini Cheesecakes III
Fun and easy but not as light as a regular cheesecake. The crust did not stay together -- it crumbled when I removed it from the muffin pan.
