Ropa Vieja in a Slow Cooker

Wonderful! Not the same old pot roast. I used balsamic vinegar instead of red wine and all green peppers since that was what I had and it was delish! Will make this again.

Fettuccine with Sweet Pepper-Cayenne Sauce

Followed the directions but added basil, diced onions and grilled chicken. It was still a little bland for me. The Cayenne added heat but not a lot of flavor. I didn't think it was too hot like many reviewers but I love spicy food. I will make this again but I think I am going to play around with adding additional spices or a different cheese. I don't know, something to add some more flavor besides hot. TY for the recipe! It is def going in rotation maybe just with a few changes. FYI I was the only one that wasn't in love with this dish, everyone else in my family went back for seconds so still a winner

Rich and Creamy Tomato Basil Soup

OK, I completely cheated on this recipe and it was still the best soup ever. Just as good as Jason's Deli version. I used canned tomatoes with Basil and dried Basil and chicken stock and it still turned out delicious. I added a topping of mozzarella cheese and my family was licking the bowls. Great served with simple BLTs!

Mexican Chicken Corn Chowder

My husbands fav soup, really the only thing he ever asks me to make just for him!! TY for the recipe! The only thing I change is instead of cooking the chicken (which can get dry) I buy a pre-cooked rotisserie chicken and just add it in when I add the cheese. So juicy and fast. This is a great fast soup!
