Speedy Salmon Casserole

It would have been bland BUT I made it with my special french onion dip mash potatoes. I use half a tub of french onion dip in my potatoes to make them super creamy. Also, in the sauce I added garlic, onion powder, and a little curry powder. I didn't use cheddar, I used Monterey jack & cheddar mix like in the picture. It was good for a rainy day lunch. Nothing special.

Mackerel Dip

Wow, I made it exactly the same as the recipe but added 1/2 tbs of lemon juice. It was awesome. It was a nice new dip.

My Special Shrimp Scampi Florentine

I used 1/4 stick a butter and no olive oil. Instead of olive oil, I made a packet of pesto & used the entire packet. IT WAS AMAZING. My hunny said it was restaurant quality & stuffed himself silly.

Stuffed Cabbage Rolls

Fabulous, but the leaves should be pre-cooked a little longer that the recipe calls for. I will do it for 15min next time. I used crushed tomatoes instead of tomato soup and sprinkled them with crushed red pepper.
