Cream Filled Cupcakes

Reviewed: Jul. 30, 2010
These cupcakes were awesome. I didn't have any vanilla but I'm sure it would have been better if I did. I did wut another reviewer suggested about coring the cupcake and pouring in the filling and plugging it back up. Everyone loved it; even the grown ups!

Beth's Peach-Nectarine Muffins

Reviewed: Jul. 16, 2010
I added about a tsp of pumpkin spice, an extra nectarine, a tsp of cinnamon, and ginger and it was phenomenal! I'm going to use some nuts next time!

Italian Wedding Cookies III

Reviewed: Jul. 16, 2010
This is truly a five star recipe! I used chopped roasted almonds and ground them in the food processor and also added about a tsp of, yes, pumpkin spice! It was that much better! They were incredibly crumbly and crunchy! When I ran out of almonds, I had to improvise, so I ground 3/4 cup of toasted sesame seeds and added about another half a cup of flour to the mix and they were amazing. Try this and u will love it!

To Die For Blueberry Muffins

Reviewed: Apr. 8, 2010
These tasted better than my local bakery's muffins! At first I was worried if I did something wrong to make my batter turn out more like a dough, but it was actually supposed to be like that. I gave some to my friends and they loved it! This one's a keeper!

Todd's Famous Blueberry Pancakes

Reviewed: Apr. 6, 2010
I loved these! They were very fluffy and light, and I didn't wait an hour, I just fried them right away! But I did have to add a lot more sugar, about 2 tbsp. As to the other reviews: my batter didn't turn green when I added my blueberries, because I only folded them in and didn't over-stir. Definitely a keeper!

Downeast Maine Pumpkin Bread

Reviewed: Apr. 4, 2010
Absolutely the best pumpkin bread of all time!!! I substituted two cups of brown sugar for white, and used about two cups of fresh pumpkin purée instead of canned, and it made very yummy results! It was almost gone in a single day, but luckily I got to save a loaf for my friend! I baked one original loaf and two with about a cup of walnuts, which were of course better. This ones definately a keeper... Will make again!!!
