Irresistible Irish Soda Bread

It was really nice! It's kind of like a giant biscuit. Would be nice with raisins in it. We served it with butter and jam.

Mexican Whole Wheat Flour Tortillas

I rated this based on my changes. I found this dough super easy to work with. I let it rest for an hour because I had phone calls to make anyway. I used half and half all purpose and whole wheat flours and olive oil in place of shortening.

These were yummy! I only made half the recipe (with 1 egg) because I wasn't sure how they'd turn out but I was very happy with the result. Next time I'll make the whole recipe. I also added dried cranberries.

Spicy Vegan Potato Curry

I had to iprovise with some of the ingredients because I really wanted to make this but didn't have certain things. It was still really delicious! I used 1 1/2 fresh tomatoes chopped in a food processor, frozen peas and I blended 1/3 cup unsalted almonds with 1/3 cup water because I didn't have coconut milk. I cut back slightly on the cayenne and I served it with plain yogurt. You hardly notice how spicy it is because of the yogurt. I'm not vegan so I don't know if I kept it vegan by making these changes but YUM!

Cake Mix Cookies VIII

They were tasty but a bit too cakey for me. I forgot to add the oil as suggested. I wonder if that would have made a difference.

Simple and delicious! Not as flat as I imagined but who cares. I took suggestions and lowered the temp to 400F and placed the rack on the 2nd from top position. 7.5 minutes was perfect, they were just about to burn at 8 minutes. Used a small cookie scoop. Rolled them into balls and dipped the whole thing in sugar. I skipped the water step. I flattened them slightly before baking. Next time I'll try rolling in cinnamon sugar. This recipe is a keeper! P.S. Use a parchment lined sheet. I wouldn't never bake anything on an unlined sheet unless you like scrubbing.

Crazy Cake

My first thought when I saw the recipe was how would it turn out with no eggs? But it was yummy. The only change I made was to only make 1/2 the recipe which is something I do often. I got a perfect cake from an 8" round pan. I mixed everything in a bowl first until just combined then transferred to the oiled pan. I put ganache on it which was a mistake. The cake itself is good. Maybe my tooth just isn't sweet enough for the ganache.

Simple Chicken Brine

Wow! It was super juicy! I brined it for 24 hours and used half the recipe for 8 chicken pieces. I added 2 smashed cloves garlic and 1/2 chopped onion to the mix then I grilled it with bbq sauce. I rinsed it several times in cold water then patted it dry before cooking and it wasn't salty.

Banana Crumb Muffins

Delicious! I changed it up a bit. I added 1 tablespoon vanilla, 1 teaspoon cinnamon to the batter, 1/2 cup walnuts, 1 cup blueberries. I used 1/2 cup white sugar and 1/4 cup brown. I made it without the topping. Yum!

Best Big, Fat, Chewy Chocolate Chip Cookie

They ARE chewy! The only change I made was I used half semi sweet and half white chocolate chips. I made them smaller too because that's how I like my cookies.

The Best Rolled Sugar Cookies

Maybe I did something wrong but my dough was a little too soft to roll even after refrigeration. I probably could have added more flour but instead I just used my spritz gun and they turned out very cute. I added some nutmeg and cinnamon for extra flavour, they taste a little like plain doughnuts because of the nutmeg. I plan to put them on skewers and stick them into a flower pot for my daughter's birthday party.
