Our family is trying to go vegetarian but occassionaly I see an easy receipe and I can't resist. I sauted the onion in fresh garlic along with all the other veggies, potatoes, green beans, 3 carrots, and green pepper. I did not have kidney beans but I did have black eyes peas. Also threw in a bay leaf. This was really, really good except for the fact that the ham bone added more fat than we are used to. Next time I make this I am going to try and find a dry ham flavoring of some type to use instead of the greasy ham bone. I did try and spoon some of the grease off the top.
