I have been married for 8 years. My husband and I have three children. Emma (6), Kylee (3), and Liam (17 months old). I love to cook for my family and try new recipes! I like impressing my husband with new dishes that I've created, or a recipe that I find and make my own. Cooking is a huge part of my identity now, and a way of "creating" special dishes that my kids can enjoy for years, and then hopefully take with them as they start their own families.
My favorite things to cook
I LOVE to cook things that require a lot of preparation! I know that sounds crazy.. but I love to stand by the counter and chop, mix, grate, stir, saute and season. I like having multiple bowls in front of me and preparing my food in steps so that I can mix all the bowls together at the end! It really give me a sense of accomplishment I suppose.
My favorite foods to prepare are Pico de Gallo, Pulled Pork, any kind of grilled chicken, breakfast burritos.. the list goes on and on!
My favorite family cooking traditions
I have started my own cooking traditions, really. My mom isn't much of a cook, so I've pretty much learned on my own. I have a friend with Italian heritage who also loves to cook, and she has taught me a great deal. I have already begun teaching my five year old daughter Emma. She stands in a chair next to the counter and helps me! It's something we really enjoy doing together.
My cooking triumphs
My famous Beanie Weenie Bake for sure! It's such a HUGE hit for my family, and my husbands family. I created this dish completely by accident. When I first got married I knew literally nothing about cooking. I was using a recipe for baked beans, but instead of using pork n' beans like the recipe called for, I bought beanie weenies. I was only 19 so please don't judge me too harshly! I changed the recipe to make it my own and everyone LOVED the beanie weenie dish. It wasn't until about six months ago that I took a look at the original recipe and realized.. oh my gosh! I was supposed to be using pork n' beans all along! It's a happy accident, because had I not made the mistake so long ago, my family would not have the delicious beanie weenie bake as it is today!
My cooking tragedies
Well.. when my husband and I first got married, I was 19 like I said, and knew nothing about cooking. This story will prove that. I attempted to make tacos for us one night. Sounds easy enough, right? I mean, how could I possibly have messed THAT up?? Well I did. I did not drain or rinse the meat after browning it, and just added the seasoning right to it. They were nasty! The greasiest, nastiest tacos there ever were! The whole time we tried to eat them, grease just dripped out of the shell! Oh goodness.. I've come a long way since then!
