Pesto Chicken Penne Casserole
I love this recipe!!! I didn't want to use store bought pesto because I had basil growing outside so I used another recipe on this site - Spinach Basil Pesto. It worked out perfectly because I needed spinach for this one AND that one. I followed both exactly except for adding 4 oz. of Portabello mushrooms to the pasta mix. I do have to say that I cut the pasta recipe in half and one normal prep. of the pesto. I will be giving 5 stars to that recipe too. WOW, what a fantastically great meal !!!!

Spinach Basil Pesto
I love this recipe!!! I have to say that the whole reason I used it was because I was making another recipe on this site (Pesto Chicken Penne Pasta) and didn't want to use store bought pesto. It worked out perfectly because I needed spinach for this one AND that one. I followed it exactly. I do have to say that I cut the pasta recipe in half and used one serving of this recipe. I will be giving 5 stars to that recipe too. WOW, what a fantastically great meal !!!!

Beef Enchiladas II
I love this recipe! I, like everyone else, made my own tweeks. I cooked the hamburger with only salt and pepper. Then I added a can of green chili's, 1/2 cup of enchilada sauce, a couple dashes of cumin, cilantro, garlic powder, half of a packet of taco seasoning, some green onion, and about a cup of cheese. Then I wrapped it up in (flour) tortillas, poured on the enchilada sauce, and topped it off with cheese. I usually prefer corn tortillas but the flour worked great. This was super quick and easy. I think next time I will add a second can of green chili's. YUM and thanks.
